  • 1 block tofu firm, drained and crumbled
  • 1 onion small and finely chopped
  • 2 cloves of garlic minced
  • 1/2 cup BBQ sauce (for unique flavor twist)
  • 8 tortillas corn or flour
  • 1 cup shredded cheese (cheddar, Monterey Jack, or your choice)
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • salt and pepper to taste to taste

    Preheat Oven

    Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
    Cook the Filling
    Heat olive oil in a large skillet over medium heat.Add onion and garlic and cook for 3–4 minutes until softened.
    Add ground pork and cook until browned, breaking it apart as it cooks.
    Stir in: Crumbled Tofu, Cumin, Chili Powder, Salt and pepper
    Cook another 5 minutes to combine.
    Add BBQ Sauce
    Stir ¼ cup BBQ sauce into the pork and tofu mixture. Remove from heat.
    Assemble the Enchiladas
    Fill each tortilla with the pork and tofu mixture.Roll tightly and place seam-side down in the baking dish.
    Add Sauce & Cheese
    Pour red enchilada sauce evenly over the enchiladas.Drizzle remaining ¼ cup BBQ sauce over the top.Sprinkle with shredded cheese.
    Bake
    Cover with foil and bake 20 minutes.Remove foil and bake 10 more minutes until cheese is melted and bubbly.
    Serve
    Garnish with fresh cilantro and serve warm.
