Instructions
Sauté the onion and garlic.
- Melt the butter in a large soup pot over medium heat. Add the diced onion and cook for 4–5 minutes, stirring occasionally, until softened. Add the garlic and cook for another 30 seconds.
Cook the potatoes.

Blend part of the soup.

Add the broccoli.

Melt in the cheddar.
