Either way, they’re absolutely delicious, especially with a scoop of vanilla ice cream.
Cozy Easy Apple Crumble Bars
These easy apple crumble bars combine tender cinnamon-spiced apples, a buttery shortbread-style base and a golden crumb topping. Depending on the apples you use, they can be served as individual squares or as a softer, rustic apple crumble. Both versions make a comforting homemade fall dessert.
Why These Apple Crumble Bars Are So Good
The texture is what makes them work so well. The apple layer stays soft and juicy, while the crumb topping gives you that buttery, slightly crisp finish in every bite.
A good tip is to let the bars cool before cutting them. They firm up as they sit, which makes the slices much neater and keeps the filling from sliding out.

Tips and Tricks for the Best Easy Apple Crumble Bars
- Use apples that hold their shape. Firmer apples give the filling a better texture and keep the bars from turning mushy.
- Cut the apples fairly evenly. Small, similar pieces cook at the same rate and make the apple crumble bars easier to slice.
- Don’t overwork the crumble. Mix just until you get coarse, buttery crumbs. Too much mixing can make the topping dense instead of crumbly.
- Press the base firmly. A well-packed bottom layer helps the bars hold together once they’re cut.
- Let them cool completely. This is probably the hardest part, but it matters. The filling sets as it cools, so the slices come out much cleaner.
- Chill for extra-neat slices. If you want really tidy bars for a dessert tray, refrigerate them briefly before cutting.
- Warm before serving if you like. A few seconds in the microwave brings back that fresh-baked apple crumble feel, especially with vanilla ice cream.
Real Kitchen Tip:Let the apple crumble bars cool completely before slicing — the apple filling firms up as it rests, giving you cleaner edges and bars that hold together instead of falling apart.

Easy Variations for Apple Crumble Bars
- Try different apples. A mix of sweet and tart apples gives the filling more flavour and keeps the apple crumble bars from tasting one-note.
- Add nuts to the crumble. Chopped pecans or walnuts add a little crunch and work really well with the cinnamon apple filling.
- Make them extra spiced. Add a pinch of nutmeg, ginger or allspice for a warmer fall flavour.
- Add caramel. A light drizzle of caramel over the apple layer or finished bars turns them into a richer caramel apple dessert.
- Use pears too. Replace some of the apples with firm pears for a softer, slightly sweeter variation.
- Add oats to the topping. A handful of rolled oats gives the crumble a more rustic texture and a little extra chew.
- Serve them warm. Heat a bar slightly and add vanilla ice cream for an easy apple crumble dessert that feels more indulgent.

Storage Tips for Easy Apple Crumble Bars
- Let the bars cool completely first. Storing them while still warm can create condensation and soften the crumble topping.
- Keep them airtight. Store the apple crumble bars in an airtight container at room temperature for about 1–2 days, or refrigerate them for longer storage.
- Refrigerate for cleaner texture. Chilled bars firm up nicely and are easier to cut if you want neat slices for a dessert tray.
- Reheat gently. Warm individual bars for a few seconds in the microwave if you want that fresh-baked apple crumble texture again.
- Freeze individual portions. Wrap cooled bars well and place them in a freezer-safe container so you can thaw only what you need.
- Add toppings after reheating. Caramel sauce, whipped cream or vanilla ice cream are best added just before serving so the bars don’t get soggy.

- Parchment paper
- Large mixing bowl
- Medium mixing bowl
- Measuring cups
- Measuring spoons
- Wooden spoon or spatula
- Paring knife
- Vegetable peeler
- Cutting board
- Sharp knife
Ingredients
Crumble Base and Topping
- 2 cups all-purpose flour
- ¾ cup granulated sugar
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ¾ cup butter unsalted and softened
- 1 egg large
- 1 teaspoon vanilla extract
Cinnamon Apple Filling
- 4 cups apples peeled and finely diced, about 4 medium apples
- ⅓ cup brown sugar packed
- 1 tablespoon granulated sugar
- 1½ tablespoons cornstarch
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
Prepare the baking pan.
- Preheat the oven to 350°F. Line an 8-inch square baking pan with parchment paper, leaving some overhang along the sides. This makes the cooled apple crumble bars much easier to lift out.
Make the crumble mixture.
- Add the flour, granulated sugar, baking powder and salt to a large mixing bowl. Stir to combine. Add the softened butter, egg and vanilla, then mix with a fork or your fingertips until a soft, crumbly dough forms. The mixture does not need to look perfectly smooth.
Press in the base.
- Set aside about one-third of the crumble mixture for the topping. Press the remaining mixture firmly and evenly into the bottom of the prepared pan.
Prepare the apple filling.
- In a separate bowl, combine the diced apples, brown sugar, granulated sugar, cornstarch, cinnamon, nutmeg, lemon juice, vanilla and salt. Stir until the apples are evenly coated. Dice the apples fairly small so they soften properly and the squares slice neatly.
Assemble the apple crumble bars.
- Spread the cinnamon apple filling evenly over the base. Sprinkle the reserved crumble mixture over the apples, leaving a few small spaces where the filling can show through.
Bake until golden.
- Bake for 40–45 minutes, or until the crumble topping is golden brown and the apple filling is bubbling lightly around the edges.
Cool and slice.
- Let the bars cool completely in the pan for at least 1 hour. Lift them out using the parchment paper and cut into 12 squares with a sharp knife.
Notes
- Make-Ahead Tip: For firmer, neatly sliced apple crumble bars, refrigerate overnight before cutting. If you can’t wait, enjoy them warm as a softer, rustic apple crumble with vanilla ice cream!
- Use firm baking apples such as Granny Smith, Honeycrisp or Pink Lady for the best apple crumble bars. A mix of tart and sweet apples works especially well.
- Dice the apples fairly small so they soften evenly and the apple crumble squares hold together when sliced.
- Use softened butter, not melted butter. The crumble mixture should look a little rough but hold together when pressed.
- Press the bottom layer firmly into the pan to create a sturdy base for the cinnamon apple filling.
- Let the baked bars cool completely before cutting. The apple filling thickens as it cools, and the slices will be much neater.
- For extra flavour, add a pinch of ground ginger or a handful of chopped pecans to the crumble topping.
- Serve these easy apple crumble bars at room temperature or slightly warmed with vanilla ice cream.
