Equipment

  • 1 Medium saucepan (for simmering and thickening the gravy)
  • 1 Cutting board
  • 1 Sharp knife (for shallot, garlic, and herbs)
  • 1 Measuring cups and spoons
  • 1 Whisk (for smooth, lump-free thickening)
  • 1 Blender or immersion blender (for creating the silky, smooth base)
  • 1 Wooden spoon or heat-safe spatula
  • 1 Fine mesh strainer (optional, for an ultra-smooth finish)
  • 1 Gravy boat or serving jug (for serving warm)

Ingredients

Soy & Herb Infused Gravy

  • 2 cups chicken broth low-sodium, or low sodium turkey broth
  • 1 tbsp soy sauce light, adds umami without darkening the gravy
  • 1 tbsp cornstarch + 2 tbsp cold water for thickening slurry
  • ¼ cup whole milk or light cream, adds subtle richness
  • 1 tbsp unsalted butter optional, for added gloss
  • 1 small shallot minced (~2 tbsp)
  • 1 clove garlic smashed
  • 1 tsp rosemary fresh, finely chopped
  • 1 tsp parsley fresh, finely chopped (add at the end)
  • ½ tsp dried thyme or 1 tsp fresh
  • ½ tsp black peppercorns lightly crushed
  • 1 bay leaf
  • Salt to taste use sparingly — soy adds natural saltiness

Instructions

  • Infuse the Broth
    In a medium saucepan, combine:• Broth• Soy sauce• Shallot• Garlic• Rosemary• Thyme• Peppercorns• Bay leaf
Simmer uncovered over medium heat for 10 minutes to extract and concentrate flavors. Once the flavors have melded together, let it cool, then transfer to a blender and puree until smooth.
  • Thicken the Gravy
Return the pureed broth to the pan. Whisk in the cornstarch slurry and stir continuously over medium heat until slightly thickened (about 2–3 minutes). The gravy should coat the back of a spoon while remaining pourable.
  • Finish & Adjust
Reduce heat to low. Stir in: Milk or cream & Butter (if using)
Add fresh parsley, then taste and adjust salt if needed.
  • Serve
Pour into a warmed gravy boat. The result is a glossy, lightly opaque gravy with delicate herbal notes and a refined, savory finish.
  • • Skip the flour: Cornstarch keeps the gravy clear and smooth.
    • Blend thoroughly: Pureeing the broth preserves all the flavors for a polished finish.
    • Add fresh herbs at the end: This keeps their bright color and aroma intact.
    • Use light soy sauce: It adds subtle umami without overpowering the color or flavor.
