  • ¼ tsp sea salt heaping
  • ¼ tsp black pepper freshly ground
  • 1 tbsp sesame seeds white or black, for garnish

For the Creamy Lemon-Cilantro Sauce

  • ½ cup Greek yogurt plain or mayonnaise for richer texture, or tahini for vegan option
  • 1 tsp lemon juice fresh
  • 1 garlic clove small and finely minced
  • ½ tsp sriracha or hot sauce, optional
  • ¼ tsp salt kosher

For the Toppings

  • 1 red onion small and thinly sliced
  • 2 tbsp white vinegar
  • 1 tsp sugar
  • Pinch salt
  • ½ cup cilantro leaves fresh
  • 1 lemon cut into wedges

Instructions
 

  • Step 1: Prep & Quick-Pickle
    Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
    Slice cabbage into 1-inch thick steaks, keeping the core intact to hold them together.
    In a small bowl, combine sliced red onion, vinegar, sugar, and salt. Set aside to quick-pickle for at least 20 minutes.
  • Step 2: Season & Roast
    In a bowl, mix olive oil, smoked paprika, garlic powder, salt, and pepper.
    Arrange cabbage steaks on the baking sheet, placing cut-side down for maximum char. Brush generously with the seasoned oil.
    Roast for 15–20 minutes, flip carefully, then roast another 15–20 minutes until: deep golden brown, crispy, charred edges and tender center
  • Step 3: Make the Sauce
    Whisk together yogurt, lemon juice, garlic, sriracha (if using), and salt until smooth and creamy. Adjust seasoning to taste.
