Equipment

  • Large baking sheet or rimmed sheet pan – essential for even roasting and achieving crispy roasted cabbage steaks without overcrowding
  • Parchment paper – prevents sticking and makes cleanup easy while helping the cabbage roast evenly
  • Sharp chef’s knife – for slicing the cabbage into thick, even 1-inch steaks
  • Cutting board – for safe and stable prep of cabbage, onion, and herbs
  • Small mixing bowls – for the lemon-cilantro sauce and quick-pickled red onions
  • Pastry brush or spoon – to evenly coat cabbage steaks with seasoned olive oil
  • Whisk or fork – for blending the creamy sauce until smooth
  • Spatula – for carefully flipping the cabbage steaks without breaking them

Ingredients

For the Smoky Roasted Cabbage Steaks

  • 1 green cabbage medium sized, firm and heavy
  • 3 tbsp olive oil extra-virgin
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ¼ tsp sea salt heaping
  • ¼ tsp black pepper freshly ground
  • 1 tbsp sesame seeds white or black, for garnish

For the Creamy Lemon-Cilantro Sauce

  • ½ cup Greek yogurt plain or mayonnaise for richer texture, or tahini for vegan option
  • 1 tsp lemon juice fresh
  • 1 garlic clove small and finely minced
  • ½ tsp sriracha or hot sauce, optional
  • ¼ tsp salt kosher

For the Toppings

  • 1 red onion small and thinly sliced
  • 2 tbsp white vinegar
  • 1 tsp sugar
  • Pinch salt
  • ½ cup cilantro leaves fresh
  • 1 lemon cut into wedges

Instructions

  • Step 1: Prep & Quick-Pickle
Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
Slice cabbage into 1-inch thick steaks, keeping the core intact to hold them together.
In a small bowl, combine sliced red onion, vinegar, sugar, and salt. Set aside to quick-pickle for at least 20 minutes.
  • Step 2: Season & Roast
In a bowl, mix olive oil, smoked paprika, garlic powder, salt, and pepper.
Arrange cabbage steaks on the baking sheet, placing cut-side down for maximum char. Brush generously with the seasoned oil.
Roast for 15–20 minutes, flip carefully, then roast another 15–20 minutes until: deep golden brown, crispy, charred edges and tender center
  • Step 3: Make the Sauce
Whisk together yogurt, lemon juice, garlic, sriracha (if using), and salt until smooth and creamy. Adjust seasoning to taste.
  • Step 4: Assemble & Serve
Transfer roasted cabbage steaks to a serving platter.
    Top with:
    Drained pickled red onions
    Sesame seeds
    Fresh cilantro
Serve with lemon wedges and the creamy lemon sauce for drizzling or dipping.
  • High Heat = Better Flavor: Roasting at 425°F creates that irresistible smoky char.
Don’t Fear the Char: The dark, crispy edges bring out the cabbage’s natural sweetness.
Balance with Acid: Lemon juice and pickled onions cut through richness for a bright finish.
Texture Boost: Creamy sauce + tender cabbage + crunchy onions = perfect bite.
Make It Your Own: Swap cilantro for parsley or try Cajun, cumin, or lemon pepper seasoning.

Notes

  • Best cabbage choice: Use a firm, heavy green cabbage for the best roasted cabbage steaks that hold their shape and develop crispy, caramelized edges.
  • High-heat roasting is key: Roasting at 425°F (220°C) creates the signature smoky flavor and golden-brown crust that defines a great roasted cabbage recipe.
  • Don’t skip the oil: Extra-virgin olive oil helps the cabbage roast properly and enhances flavor while promoting crispy edges and deep caramelization.
  • Core keeps it intact: Leaving the core in each slice helps the cabbage steaks stay together during roasting and flipping.
  • Pickled onions add balance: Quick-pickled red onions bring acidity and crunch, cutting through the richness for a perfectly balanced bite.
  • Sauce on the side is best: Serving the lemon-cilantro sauce separately keeps the cabbage crispy and allows for customizable flavor in every bite.
  • Sesame seeds add texture: A mix of black and white sesame seeds adds a nutty crunch and visual contrast for a more elevated presentation.
  • Serve immediately for best texture: Roasted cabbage steaks are best enjoyed hot from the oven when the edges are still crispy and caramelized.
  • Highly customizable recipe: Easily adapt with different spice blends like Cajun, cumin, lemon pepper, or chili flakes for endless flavor variations of roasted cabbage steaks.
