Ingredients
  

French Crepes

  • 3 eggs
  • 1 cup milk
  • ¾ cup flour
  • 1 tbsp sugar optional
  • ¼ tsp salt
  • Cooking spray or small amount of oil

Chicken - Bacon & Vegetable Filling

  • 2 cups white mushrooms chopped
  • 1 cup white onion about ½ onion, chopped
  • 1 clove garlic crushed
  • 1 tbsp dried rosemary
  • 1 cup spinach frozen and chopped
  • 2 corn 2 ears fresh
  • ¾ cup bacon crispy and chopped
  • 3 chicken thighs
  • 2 tbsp olive oil extra virgin
  • 1 410 ml Alfredo cream sauce

Optional Toppings

  • Shaved parmesan cheese
  • Green onions chopped
  • Extra bacon bits

Instructions
 

  • Make the Crepe Batter
    In a medium bowl, beat the eggs well.
    Add milk and mix until smooth.
    Add flour, sugar (optional), and salt.
    Beat with an electric handheld mixer until smooth and lump-free.
    Cover and refrigerate for at least 1 hour.
  • Cook the Crepes
    Heat a medium frying pan over medium heat and lightly coat with cooking spray or oil.
    Pour about ⅓ cup of batter into the pan and swirl to coat evenly.
    Cook until the top loses its shine and edges begin to lift.
    Flip and cook until lightly golden.
    Remove and stack on a plate, separating with parchment paper.
    Repeat with remaining batter.

  • Prepare the Filling
    Cook bacon until crispy and set aside.
    Heat olive oil in a large pan over medium heat.

    Stir in rosemary and mix well.
    Add ⅔ of the Alfredo sauce and ½ cup bacon just before serving.
  • Assemble the Crepes
    Place a crepe on a plate.
    Add filling down the center.
    Fold or roll the crepe.
    Warm remaining Alfredo sauce and drizzle over top.
    Garnish with parmesan, bacon bits, and green onions.
