Crumble Base and Topping

  • 1 cup light brown sugar packed
  • 2 cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 cups rolled oats
  • 1 cup butter unsalted and softened

Filling

  • White chocolate chips generously sprinkled

Instructions
 

Step 1: Prepare the Pan

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan and line with parchment paper or greased foil for easy removal.

Step 2: Make the Crumble Mixture

  • In a large bowl, combine brown sugar, flour, baking soda, salt, and rolled oats. Stir in cinnamon and vanilla if using.
  • Add softened butter and mix until the mixture resembles coarse crumbs. A food processor works best for an even crumble texture, but mixing by hand also works well.

Step 3: Assemble the Bars

  • Press about two-thirds of the oat mixture firmly into the bottom of the prepared pan to form the crust.
  • Spread raspberry jam evenly over the crust, leaving a small border around the edges. Sprinkle generously with white chocolate chips.
  • Scatter the remaining crumble mixture over the top and gently press it down lightly.

Step 4: Bake

  • Bake for 35–40 minutes, or until the top is lightly golden brown.
  • Cool completely in the pan before slicing into bars.
  • For the best texture, fully chill the bars before slicing. This helps the raspberry layer set properly and keeps the crumble topping crisp, giving you clean bakery-style squares that hold together beautifully.

Notes

  • Seedless raspberry jam gives the smoothest texture, but regular raspberry jam works too.
  • For cleaner slices, chill the bars before cutting.
  • White chocolate pairs beautifully with tart raspberry flavor.
  • Store bars in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.
