Ingredients
  

  • 2 ciabatta rolls or Italian sandwich buns
  • 2 cups shredded chicken turkey, or pulled pork (cooked)
  • 1 tablespoon olive oil or butter
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 3 to 4 tablespoons basil pesto for spreading on the bread
  • 4 slices provolone mozzarella, havarti, or Swiss cheese
  • Lettuce leaves
  • tomato Sliced
  • Optional fresh basil leaves

Instructions
 

Warm the shredded meat.

  • Add the shredded chicken, turkey, or pork to a skillet with olive oil or butter. Season with garlic powder, Italian seasoning, salt, and pepper. Warm over medium-low heat for 3 to 4 minutes, just until heated through. Keep it simple — the pesto is going on the bread, not into the meat.

Toast the bread.

  • Slice the buns open and lightly toast them in a skillet, oven, or toaster oven. This helps the bread hold up once the pesto and warm filling go in.

Spread the pesto on the base.

  • Spread a generous layer of basil pesto over the bottom half of each bun. This gives the sandwich that rich herby flavour right away when you bite into it.

Add the shredded meat.

  • Spoon the warm shredded meat over the pesto layer.

Melt the cheese.
