Chicken

  • 2 chicken breasts or 4 thighs cut into bite-size pieces
  • 3-4 tbsp Nando’s Perinaise main marinade base
  • 1 onion finely chopped
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp black pepper
  • ½ tsp salt
  • Juice of ½ lemon
  • 1 tbsp olive oil
  • 1/2 cup red bell peppers cut small

Golden Egg Rice

  • 1 ½ cups basmati rice
  • 3 cups chicken stock
  • 1 tsp turmeric for golden color
  • 1 tbsp butter or oil
  • 1 cup green peas
  • 2 eggs lightly beaten
  • Salt to taste

Optional Heat

  • 1 red chili pepper finely chopped (optional, for extra heat)

Finish & Garnish

  • Extra Nando’s Perinaise for drizzling
  • Green onions finely sliced (for freshness and crunch)
  • Fresh Italian parsley chopped (for brightness and balance)

Instructions
 

  • Marinate the Chicken (Perinaise Base)
    Mix chicken with: Nando’s Perinaise, paprika, garlic powder, onion powder, onion, salt, pepper, lemon juice, olive oil and red bell pepper.
    Let marinate for 20–30 minutes.
  • Cook the Golden Egg Rice
    Rice Cooker Method (Recommended)
    Rinse rice until water runs clear
    Add rice + chicken stock to rice cooker
    Stir in turmeric and salt
    Cook on white rice setting
    Rest 5–10 minutes after cooking
    Fluff rice and stir in peas
    Slowly drizzle in beaten eggs while folding gently so they form soft golden ribbons through the rice
  • Stove Method
    Rinse rice
    Heat butter or oil in a pot
    Stir in turmeric briefly
    Add rice and coat evenly
    Pour in chicken stock + salt
    Cover and simmer 12–15 minutes on low heat
    Rest 5–10 minutes
    Fluff rice, add peas
    Stir in beaten eggs slowly so they cook into silky strands
  • Cook the Marinated Chicken Mixture
    Pan-fry or grill until golden and fully cooked and the bell pepper is softened.

  • Assemble the Bowl
    Spoon golden egg rice into bowls

    Drizzle generously with Nando’s Perinaise - I added a small amount of chili pepper to the Nando's sauce. This is purely optional but I sometime like a bit of extra heat.
    Top with fresh green onions and Italian parsley for freshness, colour, and balance
