Food processor or rolling pin (for crushing chocolate wafers)
Measuring spoons
Spoon or flat-bottom measuring cup for pressing crust
Freezer-safe storage cover or plastic wrap
Sharp knife for slicing
Ingredients
Chocolate Crust
1½ cups Chocolate baking crumbs - or about 24 chocolate wafer cookies crushed.
¼cupbutter or margarine, melted
Mint Filling
17ozmarshmallow crème
¼ to ½cupcrème de menthe
2cupsheavy cream
Instructions
Prepare the Crust
In a bowl, mix the crushed chocolate wafers with the melted butter until evenly combined. The texture should resemble wet sand.
Press two-thirds of the crumb mixture firmly into the bottom of a greased 9-inch springform pan to create the crust. Use your hands or the back of a spoon or measuring cup to smooth and pack it down well.
Reserve the remaining crumbs for the topping.
Make the Filling
In a separate bowl, combine the marshmallow crème and crème de menthe. Stir until smooth, creamy, and fully blended.
Start with ¼ cup crème de menthe for a lighter mint flavor. Add more if you prefer a stronger mint chocolate dessert.
Whip the whipping cream and fold into the marshmallow and crème de menthe mixture
Assemble the Dessert
Pour the mint filling over the prepared crust and spread evenly.
Sprinkle the reserved chocolate crumbs over the top.
Freeze
Place the dessert in the freezer and freeze overnight, or until fully firm and set.
Serve
Remove from the freezer a few minutes before slicing if you prefer a softer texture. Serve frozen or slightly softened depending on your preference.
For the best texture and easiest slicing, freeze this no bake mint chocolate dessert overnight before serving. A fully frozen dessert holds its shape much better and gives you those clean, beautiful layers when sliced. If the dessert feels too firm straight from the freezer, let it sit at room temperature for 5–10 minutes to soften slightly. This brings out the creamy marshmallow filling and makes the chocolate mint flavors even more delicious.
Notes
Pressing the crust firmly helps the slices hold together much better once frozen.
The mint flavor becomes slightly stronger after freezing, so it’s best to start lighter with the crème de menthe if unsure.
For cleaner slices, dip a knife into hot water and wipe dry between cuts.
This frozen mint dessert holds up surprisingly well at room temperature for short periods thanks to the marshmallow crème.
Some people enjoy it fully frozen like an ice cream cake, while others prefer it softened slightly for a creamier texture.
