Instructions
Prepare the Ground Pork
Heat the olive oil in a large skillet over medium heat.
Add the diced yellow onion and cook for 3 to 4 minutes, stirring occasionally, until it begins to soften.
Add the ground pork. Cook for 6 to 8 minutes, breaking the meat into small pieces with a wooden spoon, until fully browned and no pink remains.
Drain excess fat from the skillet if necessary.
Season the Taco Meat
Sprinkle the taco seasoning over the cooked ground pork and onions.
Pour in the water and stir until the pork is evenly coated.
Reduce the heat and simmer for 3 to 5 minutes, stirring occasionally, until the taco meat is moist and the sauce has thickened.
Warm the Taco Shells
Warm the hard taco shells according to the package directions. This makes them crisp and helps bring out their toasted corn flavour.
Assemble the Ground Pork Tacos
Spoon the warm seasoned ground pork into each taco shell.
Add the chopped romaine lettuce, shredded cheddar and mozzarella cheese, diced tomato and sliced black olives.
Finish each taco with green onions, fresh cilantro and a generous spoonful of homemade guacamole.
Serve immediately while the pork is warm and the taco shells are crisp.
For the best easy ground pork tacos, add the shredded cheddar and mozzarella directly over the hot taco meat. The cheese softens slightly, adds rich flavour and helps hold the crisp romaine, tomatoes, olives and guacamole in place.
Notes
Brown the ground pork well for the best savoury taco flavour.
Simmer the pork with taco seasoning and water until juicy but not watery.
Prepare all taco toppings before assembling.
Add the hot pork to the taco shells first.
Sprinkle the cheddar and mozzarella over the warm meat so the cheese softens slightly.
Top with romaine lettuce, tomatoes, black olives, green onions and cilantro.
Add homemade guacamole just before serving.
Serve these easy ground pork tacos immediately so the shells stay crisp.
