Instructions
Sauté the onion and garlic.
Heat the butter and olive oil in a large soup pot over medium heat. Add the onion and cook for 4–5 minutes, until softened. Stir in the garlic and cook for another 30 seconds.
Cook the carrots and potatoes.
Add the carrots, potatoes, thyme, smoked paprika, garlic powder, salt and black pepper. Pour in the broth and bring to a gentle boil.
Reduce the heat and simmer for 12–15 minutes, until the carrots and potatoes are almost tender.
Add the corn.
Stir in 1 cup of the corn and simmer for another 3–4 minutes.
Blend a small portion.
Carefully remove about 1 to 1.5 cups of the soup, including some carrot, potato, corn and broth. Blend until smooth, then stir it back into the pot.

Add the broccoli.
Stir in the broccoli and remaining ½ cup corn. Simmer for 5–7 minutes, just until the broccoli is tender but still bright green.
