1⅛ cups all-purpose flour sifted unbleached ½ tsp salt 2 eggs large - about ½ cup beaten 1⅛ cups whole milk room temperature 1 tbsp butter for greasing the pan
Mix Dry Ingredients Lightly spoon flour into a measuring cup and level it off (do not pack).
In a large mixing bowl, whisk together the flour and salt.
Mix Wet Ingredients In a separate bowl, beat the eggs until smooth and light in color.
Whisk in the milk until fully combined. Warm slightly to room temperature if needed.
Fill & Bake Fill each cup halfway with batter.
Bake at 450°F for 20 minutes.
Without opening the oven, reduce heat to 375°F and bake for an additional 20 minutes, or until puffed, golden, and crisp.
Do not open the oven door for the first 30 minutes of baking to ensure the popovers rise properly.
