Instructions
Make the dark berry base
Pour the blackberry and blackcurrant cordial into a clear 1-cup glass. Add the cold club soda and lime juice. Stir gently to combine, then let the mixture settle for a few seconds.
Prepare the orange layer
In a separate small glass or cocktail shaker, combine the orange-mango juice, peach juice or apricot nectar, and grenadine, if using. Stir gently until blended.
Add the ice
Carefully place 3–4 ice cubes into the glass over the blackberry layer. Add them slowly to avoid splashing the dark berry mixture up the sides of the glass.
Create the sunset float
Hold a spoon just above the ice with the curved back facing upward. Slowly pour the orange-mango mixture over the back of the spoon and onto the ice.
Pouring slowly helps the golden citrus mixture float above the dark berry base and creates the beautiful layered sunset effect.

Use a clear glass to show off the deep blackberry base and bright golden citrus float. A short tumbler, stemless wine glass, or small highball glass works well.
Add the ice cubes slowly so the dark berry layer does not splash up the sides of the glass. Larger ice cubes melt more slowly and help preserve the layered sunset appearance.
Pour the orange-mango mixture very slowly over the back of a spoon. This is the most important step for creating a distinct two-layered mocktail.
The berry and citrus layers will naturally begin to blend around the ice after a few minutes. That soft gradient is normal and gives the drink its beautiful sunset look.
Split Tree Blackberry & Blackcurrant Cordial provides a rich berry flavour and deep colour, but another good-quality blackberry or blackcurrant cordial may be used.

Apricot nectar is slightly thicker than peach juice and may help the golden top layer float more evenly.
Grenadine is optional. Use only a small amount because too much can overpower the fresh berry and citrus flavours and make the mocktail overly sweet.
For a less-sweet blackberry mocktail, leave out the grenadine, use plain sparkling water, and add a little extra fresh lime juice.
