Instructions
Cook and Peel the Beets
Wash the beets thoroughly under cold running water to remove any garden dirt. Leave the outer skins completely intact for cooking.
Boil: Place the whole beets into a medium pot and cover them completely with cold water. Bring the water to a rolling boil over high heat, then lower the heat to a simmer.
Check for tenderness: Cook for 30–40 minutes. They are perfectly done when a fork slides effortlessly all the way into the center of the largest beet.
Cool down: Drain the hot water and let the beets sit for a few minutes until they are cool enough to handle safely.
Slip the skins off: Grab a piece of paper towel and gently rub the outside of the beets. The skins will slide right off without any tedious peeling.
Slice: Cut the peeled roots into rustic, thick wedges or clean, thin rounds.
Assemble the Salad
Lay the base: Arrange the hand-torn leafy lettuce across a large serving plate or a shallow salad bowl.
Layer the toppings: Scatter the sliced beets evenly over the greens, then sprinkle the creamy crumbled feta cheese right over the top.
Add the flowers: Gently place the edible pansies last, spacing them out across the dish so the bright purple and yellow petals pop against the deep red beets.
Add Your Dressing Style
If using Option 1 (Vinaigrette): Whisk the olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper together in a small jar until fully emulsified. Drizzle it lightly over the plate immediately before serving.
If using Option 2 (Thick Glaze): Just before bringing the plate to the table, weave a slow, zigzag stream of the thick balsamic glaze across the beets and feta. Finish with a tiny splash of extra virgin olive oil and a small pinch of flaky sea salt if desired.
