Equipment

  • 9-inch square baking pan
  • Mixing bowls (2 medium, 1 small)
  • Measuring cups and spoons
  • Whisk or fork
  • Rubber spatula or wooden spoon
  • Zester or fine grater (for orange zest)
  • oven
  • Cooling rack (optional, but helpful for even cooling)

Ingredients

Crumb Mixture

  • 2 cups brown sugar
  • 2 cups all-purpose flour
  • ½ cup butter unsalted and softened
  • ½ tsp salt
  • ½ tsp allspice
  • 2 tsp grated orange zest

Filling

  • 1 cup sour cream
  • 1 tsp baking soda
  • 1 egg large and beaten

Topping

  • ½ cup chopped pecans or your preferred nuts

Instructions

Prepare the oven & pan

  • Preheat oven to 350°F (175°C). Grease a 9-inch square baking pan.

Make the crumb mixture

  • In a medium bowl, mix brown sugar, flour, butter, salt, allspice, and orange zest.
  • It should look like coarse, buttery crumbs — don’t overmix it into a dough.

Form the base

  • Press (well, don’t really press) — just gently scatter half the crumb mixture into the pan.
  • Leave it loose. This is what gives it that soft layered texture later.

Make the filling

  • In a bowl, mix sour cream, baking soda, and beaten egg.
  • Then stir in the remaining crumb mixture until it looks combined and thick.

Assemble & bake

  • Pour filling over the crumb base and spread it out evenly.
  • Sprinkle chopped pecans over the top.
  • Bake for 30–35 minutes, or until a toothpick comes out clean from the centre.

Cool & serve

  • Let it cool slightly before slicing.
  • Best served warm — it firms up just enough to slice but still stays soft inside.
  • You can prep this ahead and refrigerate everything separately:
When ready, just assemble and bake. Makes life easier, especially if you’re serving guests.

Notes

  • Armenian orange cake is a traditional-style citrus dessert with a soft, moist crumb
  • Best flavour comes from fresh orange zest—don’t skip it
  • Sour cream adds richness and keeps the cake tender and moist
  • Crumb-style base creates a unique layered texture as it bakes
  • Cake is lightly spiced with allspice for warm bakery-style depth
  • Brown sugar gives a deep caramel sweetness instead of plain sugar
  • Do not press the crumb base—keeps the texture light and airy
  • Cake is best served warm but holds its structure when cooled
  • Flavours deepen after resting, making it even better the next day
  • Works well as a make-ahead dessert for gatherings or holidays
  • Pairs beautifully with whipped cream or citrus-flavoured toppings
  • Can be stored at room temperature or refrigerated for longer freshness
