Watermelon Blueberry Chickpea Salad with Chicken Wings
I added these Sea Salt and Cracked Pepper Chicken Wings for extra protein and a little more yumminess, turning this easy watermelon salad into a satisfying summer lunch or light dinner. The crispy, peppery chicken tastes especially good with the sweet watermelon, fresh blueberries and tangy balsamic dressing.
For a vegan watermelon blueberry chickpea salad, simply leave out the chicken wings and feta, or use a dairy-free feta alternative. The chickpeas still add plant-based protein, making this refreshing summer salad filling enough to enjoy on its own.
Short Description of the Recipe
This Watermelon Blueberry Chickpea Salad with Chicken Wings is a fresh, colourful summer salad made with crisp living lettuce, soft Boston lettuce, juicy watermelon, sweet blueberries, chickpeas and thinly sliced radishes. Optional feta crumbles and balsamic dressing add a tangy, savoury finish, while the Sea Salt and Cracked Pepper Chicken Wingsbring extra protein and plenty of yumminess.
Why It’s Good
This easy watermelon blueberry salad has a really nice balance of flavours and textures. The watermelon is sweet and juicy, the blueberries add a fresh burst of flavour, and the chickpeas make the salad more filling. I also like the little crunch from the radishes. It keeps the salad from feeling too soft.
The crispy chicken wings turn it into a satisfying lunch or light summer dinner. They are especially good beside the sweet fruit and balsamic dressing. For a vegan watermelon chickpea salad, simply leave off the chicken wings and feta, or use dairy-free feta. The chickpeas still provide plant-based protein, so the salad does not feel like an afterthought.
When to Serve It
Serve this Watermelon Blueberry Chickpea Salad with Chicken Wings for a summer lunch, casual dinner, backyard barbecue or family gathering. It also makes a colourful addition to a picnic or potluck table.
I find it is best assembled shortly before serving because the watermelon begins releasing juice as it sits. Keep the balsamic dressing on the side until the last minute, and serve the warm chicken wings beside the salad so the lettuce stays crisp.
Tips and Tricks
Dry the lettuce really well. Living lettuce and Boston lettuce hold a surprising amount of water between the leaves. A salad spinner works best and helps keep this watermelon blueberry chickpea salad crisp instead of watery.
Chill the fruit before assembling the salad. Cold watermelon and blueberries make this easy summer salad taste especially refreshing on a warm day.
Drain and pat the chickpeas dry. This small step helps the chickpeas stay firm and prevents extra moisture from collecting at the bottom of the serving platter.
Slice the radishes thinly. Thin slices add a light peppery crunch without overpowering the sweet watermelon and blueberries.
Add the watermelon near serving time. Watermelon releases juice as it sits, so I usually assemble this salad shortly before we are ready to eat. It looks fresher too.
Serve the chicken wings beside the salad. Keeping the warm Sea Salt and Cracked Pepper Chicken Wingsalong the edge or on a separate plate prevents the delicate lettuce from wilting. The crispy wings add extra protein and make the salad feel like a complete summer dinner.
Wait to add the balsamic dressing. Drizzle it over the salad just before serving, or place it on the table so everyone can add their own. A little goes a long way with sweet watermelon.
Add feta at the last minute. Feta crumbles bring a salty, creamy contrast to the fresh fruit, but adding them too early can make the salad look a little messy.
For a vegan watermelon chickpea salad, leave off the chicken wings and feta, or use dairy-free feta. The chickpeas still provide satisfying plant-based protein and texture.
Use a wide platter when possible. It keeps the watermelon, blueberries, chickpeas and radishes evenly distributed, and every serving gets a good mixture of ingredients.
Variations
- Make it a vegan watermelon chickpea salad. Leave out the chicken wings and feta, or use dairy-free feta. The chickpeas add plant-based protein, so the salad is still satisfying enough for lunch.
- Serve it without the chicken wings. This fresh watermelon blueberry salad works beautifully as a light side dish for summer barbecues, picnics and potlucks.
- Add grilled chicken instead. Sliced grilled chicken breast is an easy alternative when you want extra protein but prefer something lighter than chicken wings.
- Try a different cheese. Goat cheese adds a soft, creamy texture, while fresh mozzarella gives the salad a milder flavour. I still like feta best because its salty flavour balances the sweet watermelon and blueberries.
- Use balsamic glaze. Replace the balsamic dressing with a light drizzle of balsamic glaze for a sweeter, richer finish. Do not add too much. A small drizzle is usually enough.
- Add extra crunch. Sprinkle toasted pecans, walnuts, pistachios or pumpkin seeds over the salad just before serving. Add them at the end so they stay crisp.
- Change the berries. Fresh strawberries, raspberries or blackberries can replace some or all of the blueberries. Strawberries are especially good with watermelon, feta and balsamic dressing.
- Add cucumber. Thinly sliced cucumber gives this easy summer salad even more crunch and freshness without competing with the fruit.
- Use mixed greens. Living lettuce and Boston lettuce create a soft, delicate base, but spring mix, baby spinach or chopped romaine can also be used. Romaine stays crisp a little longer if the salad will be sitting out.
- Make individual salad bowls. Divide the lettuce, watermelon, blueberries, chickpeas and radishes among bowls, then serve the chicken wings on the side. This makes it easier for everyone to choose their own feta and balsamic dressing.
Storage Tips
Store the salad components separately. Keep the lettuce, watermelon, blueberries, chickpeas and radishes in separate airtight containers whenever possible. This helps the watermelon blueberry chickpea salad stay fresh and crisp.
Refrigerate the undressed salad for up to 1 day. Once the watermelon is added, it begins releasing juice fairly quickly. The salad is still edible the next day, but the lettuce will be softer.
Keep the balsamic dressing separate. Store the dressing in a covered jar in the refrigerator for up to 1 week. Shake it well before serving because the oil and vinegar naturally separate.
Store the feta separately. Feta crumbles can be refrigerated in an airtight container for several days. Add them just before serving so the salad stays neat and fresh-looking.
Refrigerate leftover chicken wings separately. Store the cooked chicken wings in an airtight container for up to 3 days. Reheat them in the oven or air fryer so the skin becomes crisp again.
Do not freeze this summer salad. Lettuce, watermelon, blueberries and radishes lose their fresh texture after freezing and thawing.
Drain away extra watermelon juice. A little liquid at the bottom of the container is normal. Pour it off before serving leftovers, then add fresh lettuce if the salad needs a quick refresh.
This Watermelon Blueberry Chickpea Salad with Chicken Wings tastes best when freshly assembled. For the best texture, only prepare as much dressed salad as you expect to eat right away.

Watermelon Blueberry Chickpea Salad with Chicken Wings
Equipment
- Large serving platter or salad bowl
- Salad spinner
- Cutting board
- Sharp kitchen knife
- Colander
- Measuring cups and spoons
- Small saucepan, for the balsamic reduction
- Wooden spoon or silicone spatula
- Small jar or airtight container, for storing the balsamic glaze
- Baking sheet or air fryer, if reheating the chicken wings
Ingredients
Watermelon Blueberry Chickpea Salad
- 1 head living lettuce washed, dried and torn
- 1 head Boston lettuce washed, dried and torn
- 3 cups watermelon seedless and cut into bite-sized cubes
- 1½ cups blueberries fresh
- 1 398 mL/15 ounces chickpeas drained and rinsed
- 6 radishes thinly sliced
- ½ cup feta cheese crumbled, optional
- 8 to 12 cooked Sea Salt and Cracked Pepper Chicken Wings optional
Balsamic Reduction
- ½ cup balsamic vinegar
- 1 tablespoon honey Balsamic Reduction, optional
- Alternatively use about ¼ cup prepared balsamic glaze.
Instructions
Make the Balsamic Reduction
- Pour the balsamic vinegar into a small saucepan. Stir in the honey or brown sugar, if using.
- Bring the vinegar to a gentle simmer over medium-low heat. Cook uncovered for 8 to 12 minutes, stirring occasionally, until it has reduced by approximately half.
- Remove the balsamic reduction from the heat while it still looks slightly thinner than you want. It thickens quite a bit as it cools. I have learned not to walk away during the last few minutes—it can go from glossy to overly sticky surprisingly quickly.
Assemble the Salad
- Arrange the living lettuce and Boston lettuce on a large serving platter. Make sure the leaves are well dried so the watermelon blueberry salad does not become watery.
- Scatter the watermelon, blueberries, chickpeas and sliced radishes evenly over the lettuce. A wide platter works especially well because the heavier ingredients do not all sink into the middle.
- Sprinkle the optional feta crumbles over the salad.
- Arrange the warm chicken wings around the outside of the platter or serve them on a separate plate. Keeping the wings mostly off the delicate lettuce helps it remain crisp.
- Drizzle the cooled balsamic reduction lightly over the salad just before serving. Do not add too much at first. The reduction has a concentrated sweet and tangy flavour, and a small drizzle goes a long way.
Notes
- Dry the lettuce thoroughly. Living lettuce and Boston lettuce hold quite a bit of water between the leaves. A salad spinner helps keep this watermelon blueberry chickpea salad crisp instead of watery.
- Use cold watermelon and blueberries. Chilled fruit makes this fresh summer salad especially refreshing and gives it the best texture.
- Drain and rinse the chickpeas well. Pat them dry before adding them to the salad so extra moisture does not collect on the platter.
- Slice the radishes thinly. They add a light peppery crunch without overpowering the sweet watermelon and blueberries.
- Add the watermelon shortly before serving. Watermelon releases juice as it sits. I usually assemble the salad close to mealtime so the lettuce stays fresh and crisp.
- Use balsamic reduction or prepared balsamic glaze. The thick, glossy drizzle shown in the photo is more concentrated than regular balsamic dressing. Start with a small amount because the flavour is rich and tangy.
- Do not overcook homemade balsamic reduction. Remove it from the heat while it is still slightly pourable. It thickens considerably as it cools.
- Add feta crumbles at the end. Feta gives this watermelon feta chickpea salad a creamy, salty contrast, but adding it just before serving keeps the salad looking fresh.
- Serve the chicken wings beside the salad. The Sea Salt and Cracked Pepper Chicken Wings add extra protein and make this easy summer salad a complete lunch or light dinner. Keeping them along the edge also prevents the warm wings from wilting the lettuce.
- For a vegan watermelon chickpea salad, leave out the chicken wings and feta, or use dairy-free feta. The chickpeas still add satisfying plant-based protein.
- Use a wide serving platter when possible. It spreads out the watermelon, blueberries, chickpeas and radishes so every serving gets a little of everything.
- Serve immediately after adding the balsamic glaze. This colourful summer salad tastes best while the lettuce is crisp, the fruit is cold and the glaze is freshly drizzled.
