Tips and Tricks

  • Marinate for at least 1 hour. The soy-garlic marinade needs a little time to flavour the boneless chicken thighs. About 2–4 hours gives even better results.

  • 6 chicken thighs boneless and skinless
  • 1/4 cup soy sauce low-sodium
  • 2 tablespoons brown sugar add more needed
  • 1 1/2 tablespoons ketchup
  • 2 teaspoons honey
  • 2 teaspoons rice vinegar
  • 2 teaspoons olive oil
  • 1 1/2 teaspoons sesame oil
  • 2 cloves garlic minced
  • 3/4 teaspoon grated ginger fresh
  • 3/4 teaspoon smoked paprika
  • 1/4 teaspoon black pepper

Tomato Bell Pepper Spaghetti

  • 10 oz spaghetti 285 g
  • 1 tablespoon olive oil
  • 1 yellow onion finely chopped
  • 1 green bell pepper diced
  • 3 cloves garlic minced
  • 2 tablespoons tomato paste
  • 1 14 oz can 398 mL crushed tomatoes
  • 1/2 cup tomato sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper
  • 1/3 cup reserved pasta water as needed
  • 3 green onions thinly sliced

Instructions
 

Marinate the chicken.

  • Whisk together soy sauce, brown sugar, ketchup, honey, rice vinegar, olive oil, sesame oil, garlic, ginger, smoked paprika and black pepper. Add the chicken thighs and turn to coat well. Cover and refrigerate for 1–4 hours.

Make the tomato pepper sauce.

  • Heat olive oil in a large skillet over medium heat. Add onion and green bell pepper and cook for 5–6 minutes until softened.
  • Add garlic and cook for 30 seconds. Stir in tomato paste and cook for another minute.
  • Add crushed tomatoes, tomato sauce, oregano, basil, smoked paprika, salt and pepper. Simmer gently for 12–15 minutes.

Cook the spaghetti.

  • Cook spaghetti in salted boiling water until al dente. Reserve about 1/2 cup pasta water, then drain.

BBQ the chicken.

  • Preheat the barbecue to about 400°F (205°C).
  • Remove chicken from the marinade and discard the used marinade. Grill for approximately 5–7 minutes per side, or until nicely browned and the internal temperature reaches 165°F (74°C).
  • Let rest for 5 minutes.

Toss the pasta.

  • Add spaghetti to the tomato and green pepper sauce and toss until well coated. Add a splash of pasta water if needed.

Serve.

  • Twirl the spaghetti onto a large serving platter. Arrange the BBQ chicken thighs over and between the pasta, just like your photo. Spoon some of the tomato and green pepper sauce around the chicken and finish generously with sliced green onions.
