Cozy Soft Cinnamon Cupcakes

These soft cinnamon cupcakes with cinnamon cream cheese frosting are light, tender and full of warm spice. The cupcakes have a soft crumb with just enough cinnamon, while the creamy frosting adds a rich, tangy finish that balances the sweetness.

Why These Cinnamon Cupcakes Are So Good

The texture is what really makes them. A well-creamed batter helps the cupcakes bake up lighter, while sour cream keeps them soft and moist without making them dense.

The cinnamon cream cheese frosting brings everything together. It’s smooth, slightly tangy and gives the cupcakes a cozy cinnamon flavour without overwhelming the cake.

When to Serve Cinnamon Cupcakes

These cinnamon cupcakes are perfect for fall baking, Thanksgiving dessert tables, birthdays, afternoon coffee or any time you want a simple homemade cupcake with warm spice.

They’re especially nice during cooler weather, but they work year-round. Serve them plain, dusted with extra cinnamon, or topped with a few crumbs or chopped nuts for a little texture.

Tips and Tricks for the Best Cinnamon Cupcakes

  • Use room-temperature ingredients. Butter, eggs, sour cream and milk blend more evenly, which helps these cinnamon cupcakes bake up soft and tender.
  • Cream the butter and sugar well. Give it a few minutes. That extra air is one of the easiest ways to get a lighter cupcake instead of a dense one.
  • Add the eggs one at a time. Let each one mix in before adding the next so the batter stays smooth.
  • Don’t overmix once the flour goes in. Mix just until combined. Overworking the batter can make the cupcakes tougher.
  • Measure the flour carefully. Too much flour can dry out soft cinnamon cupcakes, so spoon it into the measuring cup and level it rather than packing it down.
  • Don’t overbake. Take the cupcakes out when the tops spring back lightly and a tester comes out with a few moist crumbs.
  • Cool completely before frosting. Even slightly warm cupcakes can soften the cinnamon cream cheese frostingand make it slide.

Real Kitchen Tip:Cream the butter and sugars for a full 3 minutes before adding the eggs. That extra mixing adds air to the batter and helps these soft cinnamon cupcakes bake up lighter, fluffier and more tender instead of dense.

Easy Variations for Cinnamon Cupcakes

  • Add a cinnamon swirl. Sprinkle a little cinnamon sugar through the batter for extra warm spice in every bite.
  • Try maple frosting. Swap some of the vanilla for maple flavour to give these cinnamon cupcakes a cozy fall twist.
  • Add chopped nuts. Pecans or walnuts add a little crunch and work really well with the cinnamon cream cheese frosting.
  • Make them apple cinnamon. Fold in a small amount of finely diced apple for extra moisture and a classic autumn flavour.
  • Add caramel. Drizzle a little caramel over the finished cupcakes for a richer dessert.
  • Try a brown sugar topping. A light sprinkle of brown sugar and cinnamon over the frosting adds extra sweetness and texture.
  • Make mini cupcakes. Use the same batter for bite-size cinnamon cupcakes, but start checking them earlier since they bake faster.

  • Rubber spatula
  • Measuring cups and spoons
  • Ice cream scoop or large spoon
  • wire cooling rack
  • Piping bag and large star tip, optional
  • Fine-mesh sieve for dusting cinnamon, optional

Ingredients

For the cinnamon cupcakes

  • 1½ cups all-purpose flour
  • 1 teaspoons baking powder
  • ½ teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ cup unsalted butter softened
  • ½ cup granulated sugar
  • ¼ cup light brown sugar packed
  • 2 eggs large and room temperature
  • 1 teaspoons vanilla extract
  • 2 teaspoons sour cream room temperature
  • ½ cup milk room temperature

For the cinnamon cream cheese frosting

  • ¾ cup unsalted butter softened
  • 115 g cream cheese slightly softened
  • 3–3½ cups icing sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt
  • 1-2 tablespoons whipping cream only if needed
  • Ground cinnamon for dusting optional

Instructions

Prepare the cinnamon cupcakes

  • Preheat the oven.
  • Preheat the oven to 400°F. Line a standard 12-cup muffin pan with paper cupcake liners.

Combine the dry ingredients.

  • In a medium bowl, whisk together the all-purpose flour, baking powder, cinnamon and salt. Set aside.

Cream the butter and sugars.

  • Add the softened butter, granulated sugar and brown sugar to a large mixing bowl. Beat for 2–3 minutes, until the mixture is pale, creamy and slightly fluffy.

Add the eggs and vanilla.

  • Beat in the eggs one at a time, mixing well after each addition. Mix in the vanilla extract.

Add the sour cream.

  • Beat in the sour cream just until combined. The sour cream helps keep these homemade cinnamon cupcakes soft and moist.

Finish the cupcake batter.

  • Add one-third of the flour mixture, followed by half of the milk. Continue alternating the flour mixture and milk, ending with the flour. Mix gently just until no dry streaks remain. Do not overmix.

Fill the cupcake liners.

  • Divide the batter evenly between the prepared liners, filling each approximately two-thirds full.

Bake the cupcakes.

  • Bake for 18–20 minutes, or until the tops spring back lightly and a toothpick inserted into the centre comes out clean.

Cool completely.

  • Let the cupcakes cool in the pan for 5 minutes. Transfer them to a wire rack and allow them to cool completely before frosting.

Make the cinnamon cream cheese frosting

    Beat the butter.

    • Beat the softened butter for 2–3 minutes, until smooth, pale and creamy.

    Add the cream cheese.

    • Add the cream cheese and beat briefly, just until smooth. Avoid beating it for too long, as cream cheese frosting can become too soft.

    Add the remaining ingredients.

    • Gradually add 3 cups of icing sugar, followed by the cinnamon, vanilla and salt. Beat until the frosting is thick and fluffy.

    Adjust the consistency.

    • Add more icing sugar if the frosting is too soft. Add whipping cream, 1 teaspoon at a time, only if it is too firm to pipe.

    Decorate the cupcakes.

    • Pipe a generous swirl of cinnamon cream cheese frosting onto each cooled cupcake. Finish with a very light dusting of ground cinnamon.
    • For soft, moist cinnamon cupcakes, stop mixing the batter as soon as the flour disappears. Overmixing can make the cupcakes dense instead of light and tender.

    Notes

    • Use room-temperature butter, eggs, sour cream and milk for a smooth cupcake batter. Cold ingredients do not blend as evenly and can affect the soft texture.
    • Measure the flour carefully by spooning it into the measuring cup and levelling the top. Too much flour can make homemade cinnamon cupcakes dry.
    • Cream the butter, granulated sugar and brown sugar for a full 2–3 minutes. This adds air and helps create soft, fluffy cinnamon cupcakes.
    • Sour cream keeps the cupcakes moist and tender without making the batter heavy. Full-fat sour cream gives the best texture.
    • Mix the batter only until the flour disappears. A few small lumps are fine. Overmixing can make the cupcakes dense.
    • Fill the liners about two-thirds full so the cupcakes rise neatly without spilling over the edges.
    • Baking times can vary slightly between ovens. Begin checking at 18 minutes. The tops should spring back gently when touched.
    • Let the cupcakes cool completely before frosting. Even a little warmth can soften the cinnamon cream cheese frosting and make the piped swirls slide.
    • Cream cheese frosting can become loose if it is overbeaten. Mix the cream cheese in briefly, then add the icing sugar gradually.
    • For firmer bakery-style frosting, refrigerate it for 15–20 minutes before piping.
    • A large star piping tip gives these cinnamon cupcakes a tall, attractive swirl, but the frosting can also be spread on with a small spatula.
    • Finish with only a light dusting of cinnamon. Too much can taste dry or slightly bitter.
    • These easy cinnamon cupcakes taste best after sitting at room temperature for about 20 minutes, especially if they have been stored in the refrigerator.
