This one-pot creamy mushroom baked chicken is the kind of easy dinner I love making when I want something comforting without spending the whole evening in the kitchen. Tender chicken breasts bake right in a rich garlic cream sauce with plenty of savoury mushrooms, creating a flavourful meal that feels special but is still simple enough for a busy weeknight.

I like using mostly cremini mushrooms with a few shiitake mushrooms mixed in for deeper flavour.   • Make it with only cremini mushrooms. Cremini mushrooms are easy to find and give the sauce a deeper flavour than white button mushrooms. They are my first choice when I want a simple, dependable baked chicken with mushroom sauce.

  • Add shiitake mushrooms. Replace about one-third of the cremini mushrooms with sliced shiitake mushrooms for a richer, more savoury taste. Remove the tough stems first. A little shiitake goes a long way.

  • Try a mixed mushroom version. Cremini, shiitake and oyster mushrooms create a more interesting texture and make this one-pot creamy mushroom chicken feel a bit more special. Just keep the total amount of mushrooms about the same.

  • 1 cup chicken broth
  • ¾ cup whipping cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • ½ teaspoon Worcestershire sauce
  • ¼ teaspoon salt or to taste
  • 2 tablespoons chopped fresh parsley

Instructions
 

Prepare the chicken.

  • Preheat the oven to 190°C (375°F). Pat the chicken dry, then season both sides with the salt, pepper, garlic powder and paprika.

Brown the chicken.

  • Heat the olive oil in a large oven-safe skillet or shallow Dutch oven over medium-high heat. Brown the chicken for about 2 minutes per side. It does not need to be cooked through. Transfer it to a plate.

Cook the mushrooms.

  • Add the mushrooms to the same pan and cook for 4–5 minutes, stirring occasionally, until lightly browned. Add the shallot, garlic and butter. Cook for another minute.

Make the creamy sauce.

  • Sprinkle the flour over the mushrooms and stir for 30 seconds. Gradually pour in the chicken broth while stirring. Add the cream, Dijon mustard, thyme and Worcestershire sauce. Simmer for 2–3 minutes, until the sauce begins to thicken. Taste and add the remaining salt as needed.

Bake the chicken.
