Each bowl is layered with peppery arugula, roasted chickpeas, marinated artichoke hearts, fresh cucumber, juicy tomatoes and tangy quick-pickled red onion. A bright lemon cumin dressing pulls everything together. It is filling, fresh and full of texture.

Serve this easy chicken rice bowl slightly warm for a satisfying weeknight dinner, healthy lunch or make-ahead meal.

Short Description

This North African Spiced Chicken and Artichoke Rice Bowl combines juicy, warmly spiced chicken with fluffy rice, peppery arugula, roasted chickpeas and marinated artichoke hearts. Fresh tomatoes, cucumber and quick-pickled red onion add colour and crunch, while the lemon cumin dressing keeps everything bright and fresh.

Why It’s Good

This chicken rice bowl has a little bit of everything—tender chicken, crisp vegetables, creamy chickpeas and tangy artichokes. The chicken develops caramelized edges from the honey and spices, which is always the best part.

It is filling without feeling too heavy. I also like that every bite is slightly different. Some have more lemony dressing, while others pick up the smoky chickpeas or sharp pickled onion.

When to Serve It

Serve this North African chicken and rice bowl for an easy weeknight dinner, relaxed weekend lunch or colourful meal-prep option. It is especially good when the chicken and rice are still slightly warm because they soften the arugula just a little.

You can also arrange everything in separate bowls and let everyone build their own. That works well for family dinners or casual entertaining.

Ingredients for a North African spiced chicken and artichoke rice bowl, including chicken breasts, basmati rice, arugula, chickpeas, artichoke hearts, tomatoes, red onion and parsley.
Fresh Ingredients, Big North African Flavour

This North African Spiced Chicken and Artichoke Rice Bowl starts with simple, colourful ingredients: fluffy basmati rice, peppery arugula, chickpeas, marinated artichoke hearts, cucumber, cherry tomatoes and quick-pickled red onion. Smoked paprika, olive oil, fresh parsley and sesame seeds add warmth, freshness and texture. Everything is easy to prepare, but together it makes a vibrant and satisfying chicken rice bowl.

Tips and Tricks

  • For the juiciest North African spiced chicken, use boneless chicken breasts. They stay tender over higher heat and develop those darker caramelized edges from the honey and warm spices.
  • Let the chicken marinate for at least 20 minutes. A few hours is even better. Take it out of the refrigerator about 15 minutes before cooking so it cooks more evenly.
  • Pat the chickpeas very dry before roasting. This small step helps them become lightly crisp instead of soft.
  • Use cooled or slightly warm basmati rice for the chicken and artichoke rice bowl. Hot rice can wilt the arugula too quickly, while cold rice may clump together.
  • The cherry tomatoes can be halved or coarsely chopped. Chopped tomatoes release a little juice that mixes nicely with the rice and lemon dressing.
  • Drain the marinated artichoke hearts well, but save a spoonful of the marinade. Add it to the dressing for a little extra tang.
  • Rest the cooked chicken for 5 minutes before slicing. It is tempting to cut it right away, but resting keeps more of the juices inside.
  • Add the lemon dressing just before serving. This keeps the arugula fresh and prevents the rice bowl from becoming soggy.

Variations

  • Use chicken breasts: Boneless, skinless chicken thighs work well in this North African chicken rice bowl. Pound them to an even thickness so they cook evenly and stay juicy.
  • Try a grain alternative: Replace the basmati rice with quinoa, couscous, brown rice or farro. Each one gives the chicken and artichoke bowl a slightly different texture.
  • Make it vegetarian: Leave out the chicken and add extra roasted chickpeas, grilled halloumi or baked tofu. The warm spices and lemon cumin dressing still provide plenty of flavour.
  • Add more vegetables: Roasted red peppers, shredded carrots, zucchini or grilled eggplant are all good additions. I usually use whatever needs to be used up in the refrigerator.
  • Change the greens: Baby spinach, chopped romaine or mixed greens can replace the arugula. Spinach has a milder flavour, while romaine adds more crunch.
  • Adjust the spice level: Add extra cayenne for a spicier North African spiced chicken bowl, or leave it out completely for a mild family-friendly dinner.
  • Use fresh herbs: Replace the parsley with cilantro or mint, or use a combination. Fresh mint is especially good with the lemon dressing and marinated artichokes.
  • Add a creamy topping: A spoonful of plain Greek yogurt or a drizzle of tahini sauce adds a cool, creamy contrast to the warmly spiced chicken.
  • Swap the tomatoes: Use chopped Roma tomatoes, grape tomatoes or colourful heirloom tomatoes instead of cherry tomatoes. Just drain very juicy tomatoes before adding them to the rice bowl.
  • Serve it cold: Chill the chicken, rice and vegetables for a refreshing North African chicken rice salad. Add the arugula and dressing shortly before serving so everything stays fresh.

Storage Tips

  • Store the North African Spiced Chicken and Artichoke Rice Bowl in airtight containers in the refrigerator for up to 3 to 4 days.
  • For the freshest texture, keep the chicken, rice mixture, arugula and lemon cumin dressing in separate containers. This prevents the greens from wilting and the rice from becoming soggy.
  • Refrigerate the cooked chicken and rice within 2 hours of preparing the meal. Let them cool slightly first, but do not leave them sitting at room temperature for too long.
  • Store the roasted chickpeas separately when possible. They will soften in the refrigerator, but a few minutes in the oven or air fryer can bring back some of their crisp texture.
  • Keep the quick-pickled red onion in its vinegar mixture in a covered jar. Drain only what you need when assembling each North African chicken rice bowl.
  • Reheat the chicken and rice gently in the microwave until hot, then add the cold arugula, vegetables, artichoke hearts and dressing. I find this gives the bowl the best mix of warm and fresh ingredients.
  • Avoid reheating the fully assembled rice bowl because the arugula and cucumber can become soft and watery.
  • The cooked spiced chicken can be frozen for up to 2 months. Freeze it separately from the fresh vegetables, rice and dressing, then thaw it overnight in the refrigerator before reheating.

  • 3 tablespoons fresh lemon juice
  • 1 teaspoon honey

  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Quick-Pickled Red Onion

  • ½ red onion thinly sliced
  • ¼ cup red wine vinegar
  • 1 teaspoon sugar
  • ½ teaspoon salt

Instructions

Prepare the chicken breasts

  • Place the chicken breasts on a cutting board. Slice very thick breasts horizontally into thinner cutlets, or gently pound them to an even thickness of about ¾ inch. This helps the chicken cook evenly without drying out.

Marinate the chicken

  • In a large bowl, combine the olive oil, lemon juice, honey, garlic, smoked paprika, cumin, coriander, turmeric, cinnamon, cayenne pepper, salt and black pepper.
  • Add the chicken breasts and turn until every piece is well coated in the North African spice marinade. Let the chicken marinate for at least 20 minutes, or cover and refrigerate for up to 8 hours.

Roast the chickpeas

  • Preheat the oven to 425°F.
  • Pat the chickpeas dry with paper towel or a clean kitchen towel. Toss them with the olive oil, smoked paprika and salt.
  • Spread the seasoned chickpeas in a single layer on a rimmed baking sheet. Roast for 18 to 22 minutes, stirring once halfway through, until lightly crisp around the edges.

Cook the North African spiced chicken

  • Heat a cast-iron skillet or grill pan over medium-high heat. Lightly oil the pan if needed.
  • Remove the chicken from the marinade and allow the excess to drip off. Cook the chicken breasts for approximately 4 to 6 minutes per side, depending on their thickness.
  • The chicken should be browned, lightly charred and cooked to an internal temperature of 165°F. Transfer it to a cutting board and let it rest for 5 minutes before slicing. Resting really does help keep chicken breast juicy.

Make the lemon cumin dressing

  • Whisk together the olive oil, lemon juice, honey, grated garlic, cumin, salt and black pepper.
  • Taste the dressing. Add another squeeze of lemon if you prefer a brighter flavour.

Quick-Pickled Red Onion

  • Stir ingredients and let the onion sit for at least 15 minutes. Drain before adding it to the rice bowl.

Assemble the rice bowls

  • Divide the slightly warm rice and baby arugula among four serving bowls.
  • Add the roasted chickpeas, marinated artichoke hearts, cherry tomatoes, cucumber and quick-pickled red onion. The tomatoes can be halved for a colourful presentation or coarsely chopped so their juices mix into the rice.
  • Arrange the sliced North African spiced chicken breast over each rice bowl.

Finish and serve

  • Spoon the lemon cumin dressing over the chicken and vegetables.
  • Finish each chicken and artichoke rice bowl with chopped parsley and sesame seeds. Serve while the chicken and rice are still slightly warm.
  • For juicy North African spiced chicken breast, slice or pound each piece to an even thickness before cooking. This helps the chicken cook evenly, develop lightly charred edges and stay tender instead of drying out.

Notes

  • Pound or slice the chicken breasts to an even thickness so they cook at the same rate.
  • Avoid overcooking the chicken breast. Check the temperature early, especially when using thinner cutlets.
  • Use slightly warm rather than piping-hot rice. The gentle warmth softens the arugula a little without making it wilt.
  • Pat the chickpeas dry before roasting. They will crisp much better.
  • Keep the dressing separate until serving when preparing these North African chicken rice bowls for meal prep.
  • Save a spoonful of the artichoke marinade. It can be added to the lemon dressing for extra tang.
