Recipe Notes — Frozen Soup Filling

• Freeze the cream of broccoli soup in advance so it’s firm and easy to handle
• A frozen cube makes it easier to wrap inside the chicken without spilling
• The soup melts slowly while baking, creating a creamy center
• This method keeps the filling inside the chicken instead of leaking out
• The melting soup adds moisture and rich flavor to the dish
• The creamy filling blends perfectly with the cheese and prosciutto
• This simple technique creates a restaurant-quality result with minimal effort

Puff Pastry Wrapping Tips

Why Wrap in Prosciutto & Puff Pastry

Working With Puff Pastry
• Use store-bought puff pastry to save time
• Thaw pastry before using
• Lightly flour your work surface and rolling pin to prevent sticking
• Gently roll pastry into a long triangle or rectangle
• Make sure pastry is large enough to fully enclose the chicken

Sealing the Pastry
• Brush inner edges with egg yolk to help seal
• Wrap tightly around the prosciutto-wrapped chicken
• Place seam-side down on the baking sheet
• This helps prevent leaks during baking

Decorating (Optional but Recommended)
• Use leftover pastry to create decorative strips or shapes
• Add leaves, ribbons, or lattice designs

Tips and Tricks

• Freeze the soup cubes completely before assembling to prevent leaks
• Pound chicken evenly so it cooks at the same rate
• Keep puff pastry cold for the flakiest texture
• Seal pastry well with egg yolk to avoid filling escaping
• Place seam-side down on baking sheet for best results
• Let chicken rest 5 minutes before slicing to keep filling creamy
• Use parchment paper for easier cleanup

Ingredient Notes

Chicken Breasts – Boneless, skinless works best; thighs can also be used
Prosciutto – Adds saltiness and helps lock in moisture
Swiss or Elemental Cheese – Melts smoothly and pairs well with broccoli
Cream of Broccoli Soup – Creates the creamy, flavorful center
Puff Pastry – Store-bought saves time and creates a flaky crust
Herbes de Provence – Adds aromatic herb flavor

Variations

• Use mozzarella, provolone, or Havarti instead of Swiss
• Substitute cream of mushroom or cream of chicken soup
• Add spinach for extra flavor and color
• Try bacon instead of prosciutto for a smokier taste
• Add garlic or Dijon mustard for extra flavor
• Use chicken thighs instead of breasts for juicier results

Storage Tips

• Store leftovers in an airtight container in the fridge for up to 3 days
• Reheat in oven at 325°F (160°C) to keep pastry crispy
• Avoid microwaving if possible as pastry may become soggy
• Freeze assembled (unbaked) chicken for up to 2 months
• Thaw overnight in fridge before baking

Notes

Recipe Notes:
Pound Evenly – Make sure the chicken breasts are pounded to an even thickness so they cook evenly and roll easily.
Keep Puff Pastry Cold – Work quickly with the puff pastry. If it becomes too warm, place it back in the fridge for a few minutes to firm up.
Seal the Edges Well – Use egg yolk to seal the pastry tightly to prevent the filling from leaking during baking.
Check Doneness – Chicken should reach an internal temperature of 165°F (74°C) for safe eating.
Let It Rest – Allow the chicken to rest for 5 minutes after baking. This helps keep the filling creamy and makes slicing easier.
Cheese Options – Swiss, Havarti, mozzarella, or provolone all work well if you want to change the flavor.
