Short Description of the Recipe
This easy chicken and rice casserole is a cozy, no-fuss dinner made with tender bite-sized chicken, a creamy herb sauce, leftover cooked rice, and melted cheddar baked on top. It all comes together in one dish, and honestly it’s the kind of meal that feels simple but still really comforting and homemade. The rice bakes right into the sauce, so everything turns soft, creamy, and well-seasoned.
Why It’s Good
What makes this recipe stand out is how practical and flavorful it is. The chicken gets a quick golden sear first, which adds real depth you can taste in the final dish. Nothing fancy, just good cooking steps that build flavor.
And the leftover rice actually works in your favour here. It soaks up the creamy sauce as it bakes, so every bite ends up rich and cohesive instead of dry or separate. The melted cheddar on top brings everything together with those slightly crispy, golden edges that make it feel extra satisfying.
When to Serve It
This is perfect for busy weeknights when you want something warm and filling without a lot of effort. It also works really well for meal prep since it reheats beautifully the next day.
Great for family dinners, casual Sunday nights, or those “what do I do with leftover rice” moments. Simple, cozy, and always dependable.
Main Ingredients
Simple Ingredients for Chicken and Rice Casserole
This easy chicken and rice casserole starts with cooked long-grain white rice, bite-sized chicken pieces, olive oil, butter and a simple blend of garlic powder, onion powder and Italian seasoning. These everyday ingredients come together to make a flavourful, comforting chicken dinner that is easy to prepare for busy weeknights.
Tips & Tricks
If you’ve got leftover rice, use it cold straight from the fridge—it actually holds up better and doesn’t get mushy when baked. That quick sear on the chicken is worth it too, don’t rush it. Let it sit in the pan for a minute or two so you get that golden crust, that’s where a lot of the flavor comes from.
Also, mix everything while the sauce is still warm. It helps it coat the rice more evenly. And don’t be shy with the cheese on top—it’s what gives you those bubbly, slightly crispy edges after broiling.
Ingredient Notes
Cooked long-grain rice works best here because it stays fluffy and separates nicely. Short grain can get a bit too soft in a baked dish like this.
You can use chicken breasts or thighs—thighs stay a little juicier, especially after baking. The cream of chicken soup is doing most of the heavy lifting for the sauce, but the sour cream (or heavy cream) gives it that richer, homemade texture. Fresh herbs like parsley and thyme really brighten everything up at the end, so don’t skip them if you can help it.
Variations
You can easily switch this up depending on what you’ve got. Add frozen peas, spinach, or even sautéed mushrooms for extra texture.
Want a little kick? A pinch of chili flakes or a splash of hot sauce in the cream sauce works really well. You could also swap cheddar for mozzarella or a cheddar-mozzarella mix if you want it extra melty and stretchy.
Storage Tips
This casserole keeps really well. Store leftovers in an airtight container in the fridge for up to 3–4 days.
When reheating, add a small splash of broth or milk so it loosens up again and doesn’t dry out. It also freezes fine—just cool it completely first, then freeze in portions for easy weeknight meals later.
