Short Description

These Buldak noodles with meatballs and mushroom sauce are an easy 30-minute dinner made with tender cooked meatballs, quick Buldak Carbonara noodles and a rich homemade sauce with very finely chopped mushrooms. The mushrooms cook right into the sauce, so you get plenty of savoury flavour without big pieces. It’s simple, filling and a great way to use leftover meatballs.

Why It’s Good

What I like about these meatball Buldak noodles is that they feel like a completely different meal, even when you’re starting with leftovers. The beef broth, Worcestershire sauce and soy sauce give the mushroom sauce a deep savoury flavour, while the finely chopped mushrooms almost disappear as they cook.

The sauce should be loose enough to coat the curly noodles without becoming heavy. If it thickens a little too much, a splash of beef broth fixes it quickly. And if you don’t have leftover homemade meatballs, fully cooked frozen meatballs make this an especially easy weeknight dinner.

When to Serve It

Serve these Buldak noodles with meatballs and mushroom sauce when you want something warm and comforting without making a complicated dinner. They’re especially good for:

  • A quick weeknight dinner

  • Using up leftover meatballs

  • An easy lunch when you want something more substantial than plain noodles

  • Cold or rainy evenings when a bowl of noodles sounds particularly good

  • A casual family dinner when everyone wants something filling

This is also a handy recipe for the day after making spaghetti and meatballs—you get another full meal without it feeling like you’re simply eating the same leftovers again.

Your Main Simple Ingredient

Buldak Carbonara Noodles

For this Buldak noodles with meatballs and mushroom sauce recipe, I used a container of Buldak Carbonara spicy ramen noodles. The noodles have that springy, chewy texture that works really well with meatballs and a savoury homemade mushroom sauce. I prepare the noodles according to the directions on the container, but for this recipe I leave out the included seasoning and sauce packets so the mushroom sauce becomes the main flavour. It’s an easy shortcut when you want a quick noodle dinner without starting completely from scratch.

Ingredients for the Mushroom Sauce

This simple mushroom sauce for Buldak noodles and meatballs is made with everyday ingredients that build plenty of savoury flavour. Very finely chopped mushrooms, onion or shallot, garlic, butter and olive oil form the base, while beef broth, Worcestershire sauce and soy sauce give the sauce its rich, deep flavour. A little flour and cornstarch help thicken the sauce so it lightly coats the noodles and meatballs without becoming too heavy.

One practical thing that really helps is chopping the mushrooms quite fine. They brown faster, blend into the sauce nicely and give you mushroom flavour in every bite without large pieces taking over the dish.

Tips and Tricks

  • Chop the mushrooms very finely. This makes a big difference in this Buldak noodles with meatballs and mushroom sauce recipe. The mushrooms cook down into the sauce instead of leaving large pieces, and the flavour gets spread through every bite.

  • Let the mushrooms brown before adding the broth. Mushrooms release quite a bit of moisture at first. Keep cooking until most of that liquid is gone and you start seeing browned edges. That little bit of patience gives the mushroom sauce much better flavour.

  • Use leftover meatballs when you have them. This is one of those recipes that makes leftovers feel completely different. Homemade meatballs are great, but fully cooked frozen meatballs are an easy shortcut on busy nights.

  • Prepare the Buldak noodles according to the container directions. The noodles cook quickly, so I usually make the mushroom sauce first or have it almost finished before preparing them. That way the noodles don’t sit around getting too soft.

  • Leave out the Buldak seasoning packets. For this recipe, the homemade mushroom sauce for meatballs and noodles provides all the flavour you need. The packets would change the flavour quite a bit and can add a lot of heat.

  • Add the cornstarch mixture gradually. The sauce thickens surprisingly quickly once it starts simmering. You want it to coat the noodles and meatballs but still be loose enough to spoon around the bowl.

  • Keep a little extra beef broth nearby. If the sauce thickens more than you expected, a small splash of broth loosens it right back up. I find this especially useful after the noodles are added because they start absorbing the sauce almost immediately.

  • Taste before adding salt. Beef broth, Worcestershire sauce and soy sauce all bring saltiness to the mushroom sauce. Sometimes it doesn’t need any extra salt at all.

  • Don’t overcrowd the skillet. Give the finely chopped mushrooms enough room to actually brown instead of steam. A wide skillet works best for getting that deeper, savoury mushroom flavour.

  • Serve the meatball noodles right away. These Buldak noodles with mushroom sauce are at their best when freshly made. As they sit, the noodles continue soaking up the sauce, so the dish naturally becomes thicker.

Variations

  • Use different meatballs. Beef meatballs work especially well with this Buldak noodles and mushroom saucerecipe, but pork, turkey or chicken meatballs are all good options. Fully cooked frozen meatballs make the whole dinner even easier.

  • Swap the noodles. If you don’t have Buldak Carbonara noodles, use another instant ramen, wide egg noodles or even plain cooked pasta. The mushroom sauce is flexible and works with just about any noodle that can hold onto the sauce.

  • Add a little cream. For a richer version, stir in 1–2 tablespoons of heavy cream at the end. Keep it light, though. Too much cream will change the sauce from a savoury brown mushroom sauce into something much heavier.

  • Add peas. A handful of frozen peas stirred in near the end adds colour and a little sweetness. They also make this easy meatball noodle dinner feel more complete without adding much extra work.

  • Add spinach. Stir in a handful of baby spinach just before serving. It wilts quickly into the hot sauce and is an easy way to add greens.

  • Make it extra mushroomy. Increase the very finely chopped mushrooms if you want a deeper mushroom flavour. Just give them enough time to brown properly before adding the beef broth.

  • Use shallots instead of onion. Shallots give the sauce a slightly sweeter, more delicate flavour. I like them here because they cook down quickly and blend nicely with the finely chopped mushrooms.

  • Add a little heat. If you want some spice, add a very small amount of the Buldak sauce packet. Start carefully. It is much easier to add more than to fix a mushroom sauce that suddenly becomes too hot.

  • Make it more savoury. A tiny extra splash of Worcestershire sauce can deepen the flavour, especially if your beef broth is mild. Taste first, though, because the soy sauce and broth already bring quite a bit of seasoning.

  • Serve the sauce over rice instead. The meatballs with mushroom sauce are also really good over steamed rice if you want to skip the noodles altogether.

How to Make Buldak Noodles with Meatballs and Mushroom Sauce

    Prepare the Buldak noodles

    • Prepare the Buldak Carbonara noodles according to the directions on the container.
    • For this recipe, use the cooked noodles without adding the included sauce or seasoning packets. Set the noodles aside while you prepare the mushroom sauce.

    Brown the finely chopped mushrooms

    • Heat the butter and olive oil in a large skillet over medium-high heat.
    • Add the very finely chopped mushrooms and onion or shallot. Cook for about 6–8 minutes, stirring occasionally, until the mushrooms have released most of their moisture and are nicely browned.
    • Take a little time with this step. Browning the mushrooms gives this simple mushroom sauce much more flavour.

    Add the garlic

    • Stir in the minced garlic and cook for about 30 seconds, just until fragrant.

    Make the mushroom sauce

    • Sprinkle the flour over the mushroom mixture and stir well. Cook for about 1 minute.
    • Slowly pour in the beef broth while stirring.
    • Add the Worcestershire sauce, soy sauce, onion powder and black pepper. Bring the sauce to a gentle simmer and cook for 2–3 minutes.

    Add the meatballs

    • Add the cooked meatballs directly to the skillet.
    • Reduce the heat to medium-low and simmer for about 5 minutes, turning the meatballs occasionally so they heat evenly.
    • If you are using frozen fully cooked meatballs, allow a little extra time and make sure they are heated through before serving.

    Thicken the sauce

    • In a small bowl, mix the cornstarch and cold water until completely smooth.
    • Slowly stir the cornstarch mixture into the simmering mushroom sauce.
    • Cook for another 1–2 minutes, stirring gently, until the sauce has thickened enough to lightly coat the meatballs and noodles while still remaining pourable.
    • If the mushroom sauce becomes too thick, add a small splash of beef broth.

    Add the noodles

    • Add the prepared Buldak noodles to the skillet and gently toss them through the mushroom sauce.
    • You can also divide the noodles between serving bowls and spoon the meatballs and mushroom sauce over the top.

    Serve

    • Sprinkle with a little chopped parsley or dill if desired and serve immediately.
    • Finely chop and brown the mushrooms well before adding the beef broth. This gives your Buldak noodles with meatballs and mushroom sauce a deeper savoury flavour and helps the mushrooms blend smoothly into the sauce instead of standing out in large pieces.

    Notes

    • Use leftover or frozen meatballs. These Buldak noodles with meatballs and mushroom sauce are a great way to use homemade leftovers, but fully cooked frozen meatballs keep the recipe quick and easy.
    • Prepare the Buldak Carbonara noodles according to the container directions. For this recipe, use the cooked noodles without the included sauce and seasoning packets so the homemade mushroom sauce stays the main flavour.
    • Finely chop the mushrooms. Very small mushroom pieces blend into the sauce and give you rich mushroom flavour without large slices throughout the noodles.
    • Brown the mushrooms well. Let most of their moisture cook away before adding the beef broth. This gives the mushroom sauce for meatballs a deeper, more savoury flavour.
    • Taste before adding salt. Beef broth, Worcestershire sauce and soy sauce all contain salt, so the sauce may need very little extra seasoning.
    • Keep the sauce slightly loose. The noodles absorb sauce quickly, so the Buldak noodle sauce should still be pourable when you add the meatballs and noodles.
    • Use the cornstarch slurry gradually. Add only enough to thicken the mushroom sauce so it coats the noodles without becoming heavy.
    • Add extra beef broth if needed. If the sauce thickens too much, stir in a splash of broth until it reaches the consistency you like.
    • Serve right away. These meatball Buldak noodles are best hot and fresh, before the noodles have time to absorb too much of the sauce.
    • Homemade meatballs add extra flavour. If you want to make them from scratch, use your Easy Spaghetti and Meatballs recipe and save a few extras specifically for this quick noodle dinner.
    • Cremini or white mushrooms both work. Cremini mushrooms give the sauce a slightly deeper flavour, while white button mushrooms keep it milder.
    • This recipe is flexible. You can use beef, pork, chicken or turkey meatballs depending on what you have on hand.
