What Enhances the Moisture in This Banana Bread?
The key to achieving the luscious texture of this banana bread is the sour cream! While the eggs, butter, and bananas contribute to its moisture, the addition of rich and tangy sour cream elevates the texture to a whole new level.
Heat the over to 350 F. Grease one 9x 5 inch loaf pan. I used Pam spray with flour. Whatever your choice, be sure only to grease the bottom of the pan and not the sides.
Next, cream the butter and sugar in a mixing bowl, then add eggs, vanilla and lemon juice and mix well. Combine flour, baking soda, baking powder, and salt and mix into the butter and egg mixture until smooth. Do not over beat or your bread will be tough. Next, fold in mashed bananas, sour cream, and walnuts and transfer into the prepared loaf pan.
Cook for 50 minutes to 1 hour. Your banana bread will be done when the tester comes out dry. I use a wooden skewer to test my cakes.
Let cool before cutting. If you cut into your banana bread while it is still warm, it will be delicious but also it will be hard to slice without breaking apart.

Your butter should be at room temperature and creamed with the sugar for about 2 minutes. The final appearance should be light and fluffy.
Be sure to mash your bananas. I used a a fork and thoroughly mashed until well mixed.
Add the sour cream, walnuts and mashed bananas to the creamed flour, sugar and egg mixture.
Your final batter should resemble that in the photo.
