Ingredients

  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 medium shallot, finely diced
  • 1 small leek (white part only), cleaned and sliced thin
  • 2 garlic cloves, minced
  • 1 ½ lb (680 g) fresh asparagus, woody ends trimmed
  • 1 small Yukon Gold potato, peeled and diced (for silkiness)
  • 4 cups (1 L) good-quality chicken stock (or vegetable stock)
  • ¾ cup (180 ml) heavy cream
  • ½ tsp salt (adjust to taste)
  • Fresh cracked white pepper
  • A squeeze of fresh lemon juice (to brighten)

Instructions

  1. Sauté AromaticsIn a large saucepan, melt the butter with olive oil over medium heat. Add shallot, leek, and garlic. Cook gently for 5–6 minutes until soft and fragrant, but not browned.
  2. Add VegetablesCut asparagus spears into 1-inch pieces. Reserve the tips for garnish if desired. Add asparagus and diced potato to the pot. Stir to coat in the aromatic butter.
  3. Simmer the BasePour in the stock and bring to a gentle boil. Lower heat and simmer uncovered for 15–18 minutes, or until the asparagus and potato are very tender.
  4. Blend to PerfectionRemove from heat and let cool slightly. Using a high-powered blender (like a Vitamix), blend the soup in batches until completely smooth. Strain through a fine mesh sieve for a silkier texture, if desired.
  5. Finish with Cream and SeasoningReturn the soup to the pot over low heat. Stir in the heavy cream, salt, white pepper, and a small squeeze of lemon juice. Heat gently—do not boil.
  6. Adjust and ServeTaste and adjust seasoning. Serve hot in warmed bowls. Garnish with a drizzle of tarragon oil, a dollop of crème fraîche, asparagus tips, and microgreens.

  • ½ cup olive oil
  • ¼ cup fresh tarragon leaves
  • 1 tbsp flat-leaf parsley
  • Pinch of salt

Blanch herbs in boiling water for 10 seconds, then plunge into ice water. Dry thoroughly. Blend with oil and salt until vibrant green. Strain through a coffee filter or cheesecloth. Store chilled.

Stems (Main Body of the Spear)

  • Use in the soup base: These make up the bulk of the soup and are simmered with the aromatics and stock.
  • Trim the woody ends (about 1–2 inches from the bottom) — they’re too fibrous and don’t blend well.
  • Slice the tender stems into 1-inch pieces before adding them to the pot.

 

🌱 Tips / Flowerets (Top Few Inches)

  • Optional use: You can reserve some or all of the asparagus tips and lightly blanch or sauté them for a refined garnish on top of the finished soup.
  • They add a beautiful visual contrast and delicate texture
  • You can also add a few to the soup base if you’re not saving them for garnish — they’re tender and flavorful.

 

Tip for Texture:

If you want the soup to be ultra-smooth, you can:

  • Blend only the tender parts of the stems, and strain out any stringy bits with a fine mesh sieve or chinois.
  • Use a high-speed blender for the creamiest result. Asparagus can get a bit fibrous if not fully puréed.
