I’ve made a few minimal changes to suit my taste and simplify the preparation, but the heart of the recipe remains the same. Sesame Soba Noodles with Green Onions

Recipe (Serves 2–3)

 

Ingredients

  • 1 bundled bunch soba noodles
  • 1 tsp olive oil (for boiling)
  • 1 tsp salt
  • 1/3 cup soy sauce (such as Kikkoman)
  • 2 Tbsp apple cider vinegar
  • 3 Tbsp sesame oil
  • 1/4 tsp ground black pepper
  • 1 Tbsp sugar
  • 1 Tbsp olive oil (for frying)
  • 2 1/2 cups chopped green onions (reserve 1/4 cup for garnish)
  • 3 Tbsp toasted sesame seeds

Instructions

Cook the Noodles

  1. Bring a large pot of water to a boil. Add 1 tsp olive oil and 1 tsp salt.
  2. Add soba noodles and cook for 3–6 minutes, or until tender.
  3. Stir regularly to prevent clumping. Taste frequently to avoid overcooking.
  4. Once cooked, immediately rinse the noodles under cold water and drain well. This helps prevent sticking.

Prepare the Sauce

In a medium bowl, whisk together:

  • Soy sauce
  • Sesame oil
  • Apple cider vinegar
  • Sugar
  • Black pepper

Set aside.

 

Finish the Dish

  1. Heat 1 Tbsp olive oil in a large frying pan over medium heat.
  2. Add chopped green onions and cook for about 30 seconds, until fragrant.
  3. Add the sauce mixture and heat for another 30 seconds.

I used Uchiiri Soba noodles for this recipe — they have a wonderful texture and flavor, but feel free to use any good-quality soba noodles you can find.

  • Rinse in cold water immediately – This stops the cooking process and removes excess starch.
  • Drain well – Excess water can dilute your sauce and affect texture.
  • Handle gently – Soba noodles are delicate and can break easily.
  • Add sauce last – Toss with sauce just before serving to keep the texture ideal.
  • Serve warm or room temperature – Both work beautifully with soba noodles.
  • Don’t let them sit too long – If they sit too long after cooking, they may start to stick together again.
