My own recipe creation.  A colorful, fragrant fusion of tender chicken, crisp vegetables, and silky noodles brought together with rich hoisin and nutty sesame oil. Perfect for a wholesome dinner with a touch of elegance.

 

4 hearty portions, or 5–6 lighter servings,

Ingredients

  • 1–2 tablespoons sesame oil
  • 3 chicken thighs, chopped
  • 2 shallots, chopped
  • 2 cloves garlic, minced
  • 5 large mushrooms, sliced
  • ¼ cup hoisin sauce
  • 1.5 cups fresh baby spinach
  • 1 cup snap peas
  • 1 large carrot, shredded
  • 3 ears of corn, shucked and cooked (kernels removed)
  • 2 to 3 cups cooked angel hair pasta (or pasta of choice) sautéed with onions
  • Fresh herbs to garnish: basil, rosemary, or your favorites

Instructions

  1. Sauté Base Flavors:
    In a large skillet or wok, heat sesame oil over medium heat. Add sliced mushrooms and chopped shallots. Sauté until mushrooms are browned and shallots are soft, about 4–5 minutes.
  2. Cook Chicken:
    Add the chopped chicken thighs to the skillet. Cook thoroughly, stirring occasionally, until the chicken is browned and cooked through, about 6–8 minutes.
  3. Add Flavor:
    Stir in the minced garlic and hoisin sauce. Let cook for 1–2 minutes until fragrant and the sauce begins to caramelize slightly.
  4. Combine Noodles & Veggies:
    Add the cooked pasta with sautéed onions, baby spinach, snap peas, shredded carrot, and corn. Toss everything together gently until vegetables are just tender and everything is warmed through.
  5. Serve:
    Remove from heat and garnish with fresh basil, rosemary, or your preferred herbs.
