Makes about 1 1/5 cups roasted tomatoes
Ingredients:
- 2 cups cherry tomatoes
- 1 ½ tbsp olive oil
- 1 tsp honey
- 2 tbsp chopped fresh parsley (or 1 tbsp dried)
- ½ tsp dried thyme (or 1 tsp fresh)
- Zest of ½ a lemon
- Salt, to taste
- Black pepper, to taste
- Optional: 1 garlic clove (minced) or a pinch of chili flakes
Instructions:
- Preheat oven to 400°F (200°C).
- In a bowl, toss tomatoes with olive oil, honey, parsley, thyme, lemon zest, salt, pepper, and any optional additions.
