Another wonderful recipe by a Ellen Britt a teen chef at Ellen Cooks (ellencooks.ca). So, who said life had to be hard? This recipe is a total cheat and still super delicious. My secret to an easy and fast treat is that I bought the meringue shell for this delicious pavlova dessert.
I have always loved meringue and for special occasions I usually do a large Pavlova cake covered with fresh seasonal fruit and berries with my mom. I plan to post the recipe when I have that next special occasion. This time however I saw the opportunity for a smaller individualized meringue cake while walking through the grocery store. The meringues were right next to the berries calling out to me. This was my first time buying bought meringue and I was pleasantly surprised to find they tasted wonderful. The meringues came in a package of 6 so you have lots of opportunity for many desserts whether eating on your own or sharing with friends and family.
To make the most out of the easy dessert I bought whipping cream and berries. I prefer to make my own whipped cream as I can go light on the sugar. Plus, I find there is a heavier texture which gives that added level of decadence to any dessert. Nothing says a summer dessert quite like meringue and whipping cream.
Recipe for Pavlova Dessert
1 bought a totally delicious meringue shell. These often come in a package. The meringue I used for this recipe was President’s Choice (set of 8 meringue nests)
1 cup whipping cream
1 tsp vanilla
2 tsp sugar
Whip the whipping cream until almost thick. If you go too far it will turn into butter. Still delicious for that slice of toast but not what you want when it comes to this desert. Next add the sugar and vanilla and whip until thick.
Put a dollop or two of whipping cream on the meringue and then sprinkle with your favorite fruit. If you are lucky, you will have left over whipping cream for an extra snack.
