Cheesy BBQ Chicken Nachos
Prepare and cook chicken
2 chicken breasts
1 cup BBQ sauce
2 Tbsp of hoisin sauce
Marinate the chicken in the sauce for 1/2 an hour.
When ready fire up the BBQ and grill the chicken until done.
When the chicken is done cut into bite sized pieces
Preparation of Nachos
14 ounce bag of tortilla chips
2 cups of shredded marble cheddar/mozzarella cheese
1/2 cup of sliced black olives
1/2 cup of chopped Spanish onion
3/4 cup chopped green onions (optional)
Bake the tortilla chips at 350 F until the cheese is melted.
When the nachos are ready add the shredded chicken and green onions (optional)
Don't forget the salsa and guacamole!!
Best to let this marinate at least for 1/2 hour
Let cool for a couple of minutes and then cut into shredded bite sized pieces
Add as much as you like!!
I used canned olives but you can also use olives from the deli.
Suggest adding salsa and guacamole on the side as the final compliment
