It doesn't get much easier than this delicious cupcake recipe. Again a bit of a cheat in terms of work effort but when you want that cupcake and time is of the essence you can always adjust the recipe on a box mix to elevate it to something more spectacular and super moist.
1 Pkg of Duncan Hines Lemon Moist Deluxe cake mix
3 large eggs
1 1/3 cup vanilla yogurt
1/3 cup oil
Preheat oven to 350 F
Grease the bottom of a cupcake tin. I used Silicon muffin baking cups.
Blend the cake mix, eggs, yogurt and oil at low speed until moistened. Be sure to scrap the sides of the bowl so you incorporate all the batter. This should be about 30 seconds.
Beat at medium speed for an additional 2 minutes.
Pour the batter into the cupcake molds
Bake for about 18 to 21 minutes until the cake tester comes out clean.
Cool and then ice with whipping cream and sprinkles.
I iced with both white and pink whipping cream.
You now have a mouthwatering selection of cupcakes or "smallcakes" as my my mom likes to call them. Enjoy!
I don't normally recommend a box cake mix but if you add a little extra in terms of ingredients you can elevate it to the next level.
