Jonny Cake (Corn Bread)

¾ cup brown sugar with
¼ cup butter
Beat butter and sugar until velvety smooth
Add:
1 well beaten egg and a pinch of salt.
.
Mix Together:
¾ cup cornmeal,
¾ cup flour and
1 flat tsp baking soda.
Combine with: sugar and butter mixture.
Stir in: 1 cup thick sour cream.
Grease the bottom of a packing pan. I use a cooking spray instead of butter. Do not grease the sides of the pan.
When thoroughly blended, pour batter into a greased 8” pan.
Bake at 375 degrees for 20 minutes.
You can add 1½ cup shredded cheese (optional).
Once ready to serve, feel free to add butter to your sliced cake. Nothing tastes better!
Johnny Cake, often called Corn Bread, is a simple, rustic cornmeal cake with a soft crumb and a rich history. It is a perfect addition to any meal.
Cream together brown sugar and butter
Mix cornmeal, flour, and baking soda
Mix wet and dry ingredients.
Add batter to a baking pan. Ensure the baking pan's bottom is greased on only the bottom. Do not grease the sides of your pan. Not greasing the sides of the pan gives the cake something to cling to and keeps the top of the cake from becoming too round.
Bake for 20 minutes at 375 degrees. You will know the cake is done when you stick a wooden cake tester into it, and it comes out clean with no batter sticking to it.
Enjoy your Johnny cake!
Although simple, this cake is a showstopper when it comes to taste. It’s the ultimate versatile treat that makes every meal a celebration. This cake is fantastic on its own or with other meals, such as roast beef and salads. There are not many cakes that you can eat with your main course, but Johnny cake, otherwise called Corn Bread, is the exception.
One of the best parts about Johnny Cake is adding butter while the cake is still warm. It's the ultimate comfort food!
