Ellen's Pork & Barley Udon Stir Fry

Recipe

Ellen's Easy Pork & Barley Udon Dinner


2 pkgs of udon noodles.  They can be frozen of refrigerated.  

8 tbsp hoisin sauce

1 tsp soy sauce

1 tsp sesame oil

2 cups of cooked barley

1 1/4 cup of chicken stock

1 to 1 ½ cups cubed pork tenderloin

2 cups frozen or fresh peas


To prepare the udon noodles soak them in warm or hot water to separate the noodles before using.  Recommend separating with your fingers once the noodles are ready – approximately 5 minutes.  Drain the water when separated.


Cube one package of medium or firm tofu.


Cook tofu in frying pan on medium heat with soy sauce, hoisin sauce and sesame oil.  Be careful not to overcook as the tofu breaks apart easily.  


Heat the precooked barley in the chicken stock and once fully heated add to the tofu.


Add pre-cooked and cubed pork tenderloin to the tofu mixture. If adding raw make sure to fully cook first!! 


As a final step add peas and noodles and cook until hot.  


Feel free to add a bit more hoisin sauce. before plating.

I cut the tofu into strips and then cubed to size preference.

This was the perfect complement to this recipe! I suggest using any left overs you have as a substitute if pork is not readily available.

Gently fry the tofu to prevent breakage.  If it does break, don't worry as it will still taste wonderful.
