Eggless Tiramisu

I just had to try out this Tiramisu recipe from Tastes Better From Scratch (with a few little tweaks), and let me tell you—it’s a total hit! The creamy mascarpone, espresso-soaked ladyfingers, and a hint of coffee liqueur come together to create the perfect balance of flavors. Ingredients:

  • 1 ½ cups cold heavy cream

  • 8 ounces mascarpone cheese, softened to room temperature

  • ⅓ cup white sugar

  • 1 teaspoon pure vanilla extract

  • 1 ½ to 1 ¾ cups cooled brewed espresso or strong coffee

  • 3 tablespoons coffee-flavored liqueur (optional—Kahlua or Tia Maria are great choices)

  • 1 package of ladyfinger cookies (available in most grocery stores in the cookie aisle)

  • Unsweetened cocoa powder, for dusting on top

Instructions:

  1. In a mixing bowl, whip the heavy cream on medium speed. Gradually add the sugar and vanilla, continuing to beat until stiff peaks form. Gently fold in the mascarpone cheese until smooth and well combined. I used a hand mixer to fold in the mascarpone on a low speed for a few seconds.  Do not overbeat if you use this method.  Set aside.
  2. In a shallow dish, stir together the cooled espresso and liqueur, if using. Quickly dip each ladyfinger into the mixture—just a fast dunk on each side. Be careful not to soak them, as they soften very quickly and may fall apart.
  3. Arrange a single layer of dipped ladyfingers in the bottom of an 8×8 inch (or similar size) dish. Spread half of the mascarpone mixture evenly over the top.
  4. Repeat the process with a second layer of dipped ladyfingers and finish with the remaining mascarpone cream.
  5. Dust the top generously with cocoa powder using a fine mesh strainer. Cover and refrigerate for at least 3–4 hours (overnight is ideal) to allow the flavors to meld.

Make-Ahead Tip:
This egg-free tiramisu actually gets better with time! Prepare it a day ahead for the best flavor. Store in the fridge and enjoy within 2 to 3 days. to 1
