Ground Pork & Veggie Udon Bowl
Servings: 6
Total Time: 1 hour
A hearty and flavorful noodle bowl made with savory ground pork, fresh vegetables, and tender udon noodles—finished with a sweet and tangy sauce and colorful toppings.
Ingredients
Stir-Fry Base:
1.5 lbs lean ground pork
4 tbsp sesame oil (divided)
2 cups chopped onion (about ½ large onion)
1 cup oyster mushrooms, chopped
1 cup white mushrooms, chopped
3 cloves garlic, crushed
1 tbsp fresh ginger, grated
½ cup fresh water chestnuts (approx. 8), sliced
2 cups cooked green beans, halved
2 bunches fresh spinach, chopped (or 1 package frozen spinach, thawed and cooked)
Sauce:
¼ cup soy sauce
¼ cup hoisin sauce
2 tbsp honey
Noodles:
2 packages udon noodles (frozen or refrigerated)
Optional Garnishes:
Chopped red bell pepper
Sliced green onion
Instructions
1. Prepare the Stir-Fry Mixture:
In a large skillet or wok, heat 2 tablespoons of sesame oil over medium heat. Add chopped mushrooms and sauté until tender. Stir in the onions and garlic, cooking until the onions are translucent and aromatic. Transfer the mixture to a bowl and set aside.
In the same pan, add the remaining 2 tablespoons of sesame oil. Add the ground pork and grated ginger, cooking until the pork is fully browned and no longer pink. Stir in the cooked spinach, reserved mushroom-onion mixture, green beans, and sliced water chestnuts. Mix well and allow everything to heat through.
2. Make the Sauce:
In a small bowl, whisk together soy sauce, hoisin sauce, and honey. Pour the sauce over the pork and vegetable mixture, stirring until evenly coated and heated through. Remove from heat.
3. Prepare the Udon Noodles:
Soak the udon noodles in warm or hot water for about 5 minutes (or until loosened), gently separating them with your fingers. Drain thoroughly.
4. Assemble and Serve:
Option 1:
Toss the udon noodles directly into the pork mixture and stir to combine. Serve hot in bowls or on plates.
Option 2:
Place a nest of udon noodles into each serving bowl. Top generously with the pork and vegetable mixture.
Finish with a sprinkle of chopped red bell pepper and sliced green onions for added color, crunch, and freshness.

To keep your vegetables crisp, vibrant, and full of flavor in a stir-fry, timing and high heat are everything. Start by prepping all your ingredients before turning on the stove—stir-frying is fast-paced and leaves no time for chopping mid-way. Use a hot wok or skillet to sear the vegetables quickly, locking in their color and preserving that satisfying crunch. Begin with firmer vegetables like carrots, bell peppers, or green beans, then layer in softer ones like mushrooms or spinach toward the end. This cooking method ensures each ingredient maintains its best texture and taste.
Avoid overcrowding the pan, as too many veggies at once can cause steaming rather than stir-frying—resulting in a soggy finish. Cook in batches if necessary and combine everything at the end with a splash of broth or sesame oil to tie the flavors together. When stir-fried correctly, your vegetables will shine—bright, crisp, and bursting with nutrition.
