Recipe:
6 chicken thighs
½ tsp salt
½ tsp pepper
1/2 cup sun-dried tomatoes strips, drained of oil
2 tbsp oil from a sun-dried tomatoes jar
3 garlic cloves, minced
1/2 cup (125 ml) white wine
3/4 cup (185 ml) chicken broth, low sodium
3/4 cup (185 ml) heavy cream
1/3 cup (30g) parmesan, very finely shredded – I used slivered parmesan for decoration on the top
2 tsp Dijon mustard
2 bunches of washed and dried spinach,
Sprigs of fresh basil for decoration and extra flavour
Slivered or flaked parmesan for added decoration
Sprinkle salt and pepper over the chicken thighs
Heat a large skillet with the oil from the sundried tomato jar. Use caution as the oil from sundried tomatoes tends to splatter more than other oils. I used a lid at times to protect from the splatter. The extra flavour from the oil however is worth the effort.
Sear the chicken on both sides on high heat to seal in the juices and then reduce the heat to medium and cook thoroughly. Then remove the chicken from the skillet and place it on a plate.
Add the garlic to the frying and cook for 15 seconds until golden brown.
Add the wine and scrape the bottom of the pan to get all the brown bits well mixed and dissolved as much as possible. Let the wine mixture simmer for 1 minute.
Mix in the mustard and mix well.
Next add chicken broth, cream, parmesan, and sun-dried tomatoes. Bring to a boil and reduce heat to a simmer and cook for 2 to 3 minutes. Stir to ensure the parmesan is fully dissolved. Finley grated parmesan works best at this stage.
Add the chick and spinach and cook until ready to serve. The spinach will cook down quickly so watch carefully to ensure it is not overdone.
Plate your chicken with the sauce and spinach over rice and top with slivers of parmesan and fresh basil leaves.
