Cheesy Chipotle Broccoli & Carrot Soup with Bacon

Servings: 4–6

Ingredients:

  • 1 rasher bacon (reserve some for topping)
  • 1 tbsp vegetable oil
  • 6–8 coarsely chopped broccoli florets
  • 2 cups chopped broccoli (added at the end)
  • 2–3 carrots, shredded
  • 1 large white onion, chopped
  • 6 garlic cloves, minced
  • 2–3 stalks celery, chopped
  • 1 cup shredded marble cheese
  • 1 tbsp finely chopped chipotle peppers (adjust to taste)
  • 8 cups chicken broth
  • Salt and pepper, to taste

Instructions:

  1. Crisp the bacon: In a large pot, cook bacon over medium heat until crispy. Remove most bacon, leaving a little fat. Reserve some for topping.
  2. Sauté aromatics: Add vegetable oil if needed. Sauté onion, garlic, celery, and chipotle peppers until fragrant and onions are translucent, 5–7 minutes.
  3. Cook the broccoli: Add the coarsely chopped broccoli and chicken broth. Bring to a boil, then simmer 15–20 minutes until broccoli is tender.
  4. Partial blend: Use an immersion or tabletop blender to partially blend the soup, keeping some texture.
  5. Finish with reserved ingredients: Stir in chopped broccoli, shredded carrots, and marble cheese. Simmer 3–5 minutes until tender and cheese melts.
  6. Serve: Season with salt and pepper. Ladle into bowls and garnish with reserved bacon.
